Pyxis, you could maybe try something similar mixing some cornflour with milk if you have no eggs?

I don’t have dairy milk as I don’t usually drink it, although I have ordered some for tomorrow with my veg box to have for sauce. But......guess what I just did? I don’t know whether making sauce with porridge oats is a ‘Thing’, but I just tried it!
I had a head of broccoli that deffo needed to be used, but can be too bland without a cheese sauce. But no milk, and the cheddar is in the freezer, and with some coming tomorrow, I didn’t want to defrost any today. I did have some Wensleydale, which isn’t brilliant for sauces, but needs must, and some grated Parmesan, so..............
I made a quantity of porridge using oat milk, in the microwave, and stirred in black pepper, ground turmeric and ground coriander, chopped garlic, grated Wensleydale and Parmesan. I also found some sunflower seeds that were a bit out of date, so chucked some of those in as well!
Now, I like coarse porridge, so the texture of the sauce was coarse, but I didn’t mind, although smooth porridge oats might be better.
Anyway, I have just had a bowl of broccoli with porridge cheese sauce. Yey!
(I know it’s only 10:00, but I have odd meals at odd times of day! 😜)(I just lurve spiders!)

Your porridge cheese sauce sounds interesting Pyxis. If I ever run out of flour, I know what to try. I do blitz oats quite a bit anyway to varying degrees, depending on what I want to use it for.
I checked out recipes for vegan savoury bread pudding and one said to use aqua faba, so another idea for anyone who has run out of eggs.
I do feel sorry for those of you who can't get their hands on basic everyday items. Hopefully the situation will improve soon.
Only thing that I couldn't get a few weeks ago, was bread flour when doing a big shop, but managed to get a huge 5kg bag in my local small supermarket, which will last me for quite some time.7 -
Hours later I realised I could have used the hand blender to smooth the consistency! Maybe next time! I quite liked it coarse, though, and it would have been a lot better with a mature cheddar!(I just lurve spiders!)

Only needed half a chicken breast to add to the creamy bacon & mushroom sauce with tagliatelle. The ladle full lo has been bagged & added to the ‘soup drawer’ in the freezer - waste not, want not 😉
Apparently all that panic buying has led to an even bigger mountain of food waste 😡

I'm finding it hard to get the jumbo rolled oats I usually use to make my muesli. I should be grateful for what I did get. I have a lot of food. I'll be fine for at least two weeks.

I luckily got a priority supermarket delivery this morning. But somehow I have ordered fresh pasta instead of dried. Please tell me I can freeze it!6
