Pyxis....ouch with your burnt tongue. Make a note to yourself to never use pan utensils to taste from. Use a teaspoon, soup spoon, fork or whatever else....at least it will be cooler to start off from, even though the food may be hot.7

Another hm soup is on the hob. Used lo vegetables from last night’s dinner + various bits & bobs from freezer + green lentils + beef & onion stock. Fingers crossed 🤞 that it will taste good 😉Be Kind. Dustbin minestrone soup for lunch today.
Chopped onion and garlic purée fried in a little bit of oil. Add the following leftovers from the fridge.. bit of chopped red pepper, chopped ham, chopped scraggy carrots, floppy rocket and kale, bit of leftover cauliflower cheese, leftover stuffed tortelloni.
Add generous splash of sherry, carton of passata, bit of water, vegetable stock powder, dried basil, thyme and rosemary, bit of sugar. Bring to the boil then turn off the heat and leave overnight. Next day heat up and add herbal salt and black pepper and a splash of balsamic vinegar, whatever you think it needs. Result one substantial soup, serve with fresh baked buttered rolls and have something light for dessert. We had fresh pineapple.

Well, I had an epic fail today.
I decided to heat up three of the sweet potato patties (of burnt tongue fame) while making some kale crisps with the last of the kale.
Then, because the oven would already be warm, I thought that when I took them out of the oven, I could turn the heat up and roast the cashews I have, as per someone’s suggestion on one of these threads. (I forget who it was, sorry).
So, I prepared the cashews with oil and salt and chilli powder, and put them in the oven..........but I forgot to set the timer for ten minutes, got engrossed in something and............
Yup, I burned the cashews.😢
I was so cross with myself.
I tried eating a few, but they were too far gone, really. ☹️☹️☹️(I just lurve spiders!)

Had some stale bread in the fridge..... 6 small wholemeal slices........so decided to try and make some croutons, so instead of butter I brushed them with olive oil and baked them in a hot oven, winging the temperature and duration, and it seemed to work!
Never made them before, and the only mistake I made was not cutting the bread into cubes before putting them into the oven, so they aren't very regular or pretty-looking croutons, but as it’ll only be me looking at them, that won’t matter! 😃
They’ll get chucked into whatever meals I have next, instead of using pasta or rice as carbs.(I just lurve spiders!)

Had to use up a few veg today.....a pepper, 3 small potatoes, a white cabbage (not my most favourite vegetable, which is why it got left in the veg drawer from last week), and the inevitable carrot mountain.
So, with an onion, some garlic, herbs and a pot of veg stock, I used the pepper, potatoes and half the cabbage, and two carrots to make a sort of vegetable ‘thing’ by chopping everything really small.
Had some with the remaining three sweet potato patties which I re-fried, and added some baby bell chilli peppers. It was yum.
I still have about 8 carrots left, and am getting a veg delivery tomorrow, with yet more carrots and potatoes as standard. I think I might have to make carrot soup. I could chuck in the rest of the baby bell chilli pepper things to give it some zing.
Maybe I could even chuck the other half of the white cabbage in as well? That’s a good idea! 😃
Then I can use up the rest of the croutons from the stale bread! Win win!

My cheap tea yesterday was puff pastry bought for 35p YS from the freezer, cut into squares and spread with Dominos garlic and herb dip (leftover from when we had delivery on our son's birthday - we never get takeaway so it's a relatively cheap treat for him when we do). Half a frozen cream cheese cube, a few bits of chopped broccoli stalk then folded into parcels and baked. Garlic and cheese broccoli puffs! Served with roasted rosemary new potatoes (rosemary from the indestructible pot in the garden) and steamed broccoli florets.
