You can just dry fry the mushrooms and then freeze. About 30 secs each side in a large frying pan in batches, bag up and freeze on trays. That way they won't stick together and you can use as and when. Dried fried mushrooms are absolutely delicious and not wasting precious butter at the moment.5

I did roast veg yesterday, as was worried that the veg I had would start to go off.....2 large roasting pans full. Now bagged up and in the freezer. Some of my onions were looking a bit iffy, so some were roasted, and rest diced up, bagged and in freezer too.5

Maybe you can soak the coconut for a day in cold water in the fridge?

Thanks for the ideas. The Bolognese was absolutely delicious and used quite a few of the mushrooms so going to make another batch for the freezer. For lunch yesterday I made eggy bread with cheese and ham and some fried mushrooms which was so tasty so might have again today. I will definitely try and freeze some for future use as well.5

Thanks for your ideas.Boiling it for awhile softened it a bit. Not so keen really about it still becoming stuck in my teeth though. Will use small amounts and apply "violence," or simply soak it over night next.5

Just discovered this thread.
I thought I was pretty good at not wasting food as I throw very very little away but this virus and having to stay at home (in my case 12 weeks) has made me realise just where I put all the leftovers - in the freezers.
I've decided to try and not shop for food items for the month of April - quite a challenge so I'll be logging in for help and to read all the ideas.

I love the stalks from cauli and broccoli and always save them for soups or stir fries. Told my Mum off last week for throwing hers away, as well as any nice leaves that are attached.5

Will definitely be saving the cabbage and cauliflower stalks. Will freeze and add to them as and when until I've got enough to batch cook a load of soup. If I get any broccoli in my veg box I'll add the stalks from that too. I'm sure it'll make a tasty soup.
