  • Yesterday I made another soup using various los from freezer, fridge & stores. It has been zizzed & taste tested - quite spicy 🌶 & will do for about 3 days lunches for 2.

  • The risotto cakes were delicious 🤤 with chicken fried in butter & garden peas.

  • Made a strange 'bubble and squeak' type thing yesterday! Had some leftovers-  coconut rice, parsnips and carrot batons in a maple and coarse-grained mustard dressing, mashed swede and horseradish mash- so mashed it all together, added some black pepper and baked it in the oven for 20mins - it was absolutely lovely! All leftovers are gone now so I'll have to cook again today....

  • Smaller dinners! & using everything I can. DH & I had a mixed parsnip & sweet potato mash (DSis boiled potatoes) - 😋 with fried chicken + carrots.

    Not as random as some of my stuff!! 😉😂 
    Today it's roasted tomatoes with basil and garlic; fennel, blood orange and black olive salad, smashed butter beans with a coriander, chilli, garlic and blood orange balsamic dressing and garlic crushed new potatoes. I've made a fennel and blood orange relish with the fennel offcuts and I'll serve that with potato cakes (using the remaining spring onions), leaves and vegan 'halloumi' for lunch tomorrow.
