Hi everyone!
Just popped in for a bit of inspiration...
We have a jar of Thai green curry paste that DH bought a while ago randomly (YS item so didn't cost much). However, I’m not the biggest fan of Thai green curry (too much coconut milk makes it too rich for my tastes) and wondered how else we might be able to use it. We’re all veggie, so might limit some options, but any suggestions would be appreciated - I’m a bit stuck on this one! Can’t give it to anyone else as it’s a little bit past it’s best before date, though it doesn’t put me off using it!

You don't have to use coconut milk in a Thai green curry. You can substitute it with soya milk or even just leave it out. Try googling Thai green curry without coconut milk, there will be recipes on there.

Trying my best to use up bits from the freezer so I can get it defrosted. Yesterday I made a sausage and apple pie using sausagemeat that OH got reduced after Christmas for 25p and a block of shortcrust pastry that was ys for 40p. The apples were from our garden and chopped and frozen so the whole pie cost me about 70p. Served it with some mash, gravy and veg. We only used half so tonight I will serve it with chips and beans. Cant complain at 35p a meal for the 2 of us to eat (not including sides) Plus it has freed up a nice amount of room from the freezer. Aiming to spend no more than £20 for food this week which should be easily done.
Really hoping Jackie O changes her mind and comes back too.

Green curry paste can be mixed into mayonnaise or stirred into vegetable stock with a few chopped veg and noodles for a spicy soup.7
