I have to admit i've not been very good with food waste in the last week or so, what with half term and going away, I know it shouldn't be an excuse but sometimes I just run out of time. Still, I endeavour to be better and hope to get to a point where it's all second nature for me. Having said that I did make a 'use up' soup yesterday which used up half a head of brocolli, a sad remnant of red pepper, wilting lettuce, an old courgette, a carrot, half an onion and a dried chilli that was lurking in the fridge. It didn't taste too bad when I licked the spoon so hopefully it will be ok for lunch this week. DH always approaches by 'use up' soups with a bit of trepidation - sometimes they're really tasty and other times not so much!
I just wanted to ask a bit of advice actually, now and again I love to roast a small beef joint for Sunday lunch and DH and I like it to be a bit pink in the middle, but then i'm not sure what to do with the leftovers. The reason I am unsure is because I worry about the meat not being fully cooked, can you use leftover beef that's a bit pink? Does anyone else have this? I'm not sure if it's a silly question or not!
I too will really miss JackieO, i'm really sad she's decided to leave the site as I really enjoyed reading her posts. I may not post much on here but I have read it and got inspiration from it for a long time.5 -
The LO beef will be fine to eat. Just make sure you put it in the fridge, covered, as soon as it has cooled down. We often have LO roast cold the next day with chips & beans or mash & veg. Sometimes I just cover the meat in gravy and reheat it in the oven.3

Today I cooked up a large pot of chilli con carne (for DH & I only as DSis doesn’t like chilli). I tweaked the recipe a bit - added some red lentils, a couple of grated carrots, extra can of kidney beans, 2 extra peppers. It was the best one I have made - not to brag 😉. Enough to freeze a few portions as well as having dinner for a couple of nights.Only food that has been binned recently was a small amount of egg mayonnaise & a bit of lettuce - both DSis purchases 😆Be Kind. I had the most epic food fail ever the other day and I am very sad to say a lot of food got wasted.I've been saying to DH for ages that I want to batch cook lots of meals so that I can pull a meal ready to eat out of the freezer instead of just pieces of meat etc. So I made a huge batch of chilli the other day, a mixture of beef and lentils, and I also used tomato sauce that I had made earlier with aubergines and courgettes. Well it was all going so well and I was really pleased with myself for finally making a large batch of a meal when I thought I had put a tablespoon of ground cumin in but realised very quickly that I had accidentally put a tablespoon of ground cloves in!
I really don't know how I did it, I have never done anything like that before. I knew instantly that there was no coming back from this as it was such a huge quantity of cloves. We tried various things to balance the taste and DH even kept gallantly saying if we freeze it in batches he would get through it, but after eating a few mouthfuls he started to feel ill. It tasted absolutely awful, I was so upset and on the verge of tears. One thing is for sure though I will never ever make that mistake again!

That's such a shame but it definitely doesn't sound as though it can be rescued. Just write it off and try again.
