    Katsui curry is very popular and that's just a sauce with breaded/battered chicken.
    This is a really easy and tasty but probably nowhere near authentic katsu sauce :)

    Hi, ideas needed not to waste toasted fresh coconut chunks that are too hard for teeth.  They wont grind without the blades getting stuck or broken.  Cutting into thin slices with a sharp knife is too difficult and hazardous, plus some of it potentially ending up on the floor.

  • Could you use the coconut in a curry where it will be cooked down and hopefully soften it?
    I have 2.5kg of mushrooms to use. I work at a cash and carry and we have a lot of fresh stock to get rid of. I'm currently making

I know you can buy bags of frozen mushrooms but are you supposed to cook them a bit first or just freeze them raw?

    Yes you can freeze mushrooms. I slice them up and put them in a plastic bag. They tend to shrink a lot but taste fine. I'm just about to do some myself as I have some more coming at midnight tomorrow. I have to go three weeks for my next supermarket delivery. I have been waiting two weeks for this. I need to re order again on Saturday. I don't know what I need in 3 weeks.

    Have you tried mushrooms on toast? A very easy light meal. Slice and boil boil about 10 small mushrooms or 4 large in a little milk add a teaspoon of cornflour to more milk and bring it back to the boil. Add lots of black pepper. Its delicious on toast. Was one of my favourite meals when I was a child made with field mushrooms because they were not on the ration and full of protein.  Mushroom risotto is also very nice.

    If you want to freeze them, just fry them on a lowish heat until they are just cooked, let them go cold, then divide them into portion sizes and put in poly-bags or containers if you have enough room in the freezer.
    Or you could treat yourself to Mushroom soup. I make mine with chicken stock. Just cut the mushrooms up finely, fry them on a low heat and add the stock. Cook for 30 mins and blitz with a blender. Season to your taste. This freezes well. If you like you can add a little milk before serving.

    I would go with the 'violence with a blunt instrument' route with a plastic bag and a rolling pin or meat tenderiser
