Well with everything going on it seems being able to make something out of nothing is extremely useful! I did in the end make a big batch of chilli without adding any cloves this time!
So we had a portion for dinner and now have three in the freezer. I finally got a tub of jam sandwiches out of the freezer that we had leftover from DS1's birthday party in August and successfully made a bread and butter pudding. I've never made a bread and butter pudding before, it turned out well and we enjoyed it for pudding after a roast on Sunday.

Saturday - A very ropey bit of beef (full of fat & gristle 🤢) was slow cooked in the oven with carrots, potatoes & beef & onion stock - 7 hours 😱 However it was absolutely delicious 🤤 with mashed potatoes & frozen green beans. Enough for Sunday’s dinner with mash & frozen peas. A very small amount left which has been bagged & frozen as the base for my next hm soup.
Saturday I also threw together an hm soup - a spicy tomato soup. Lovely with some soda bread & enough for 6 portions.Be Kind. Stay Safe. Break the Chain. Save Lives. ⭐️2025 Savings Pot Challenge: As a monthly amount, running total = £379.00

DS made dinner Saturday for himself and dil...made enough rice to feed and army!! 🙈😂 they had more of it yesterday lunchtime and I took the rest of it ....
Finely chopped onion and garlic, cook down in olive oil, add chilli flakes, Chinese 5 spice and stir until coated. Add some dry 'chicken ' stock powder, stir, add soy sauce. Cook stirring for a couple of minutes then add cooked rice. Stir until coated. Add a splash of water, another splash of soy sauce then stir fry for a few extra minutes. Add tin of chickpeas/spring onions/peas etc if required and stir through till heated.
We didn't bother adding anything - it was lovely and dh has taken some for lunch too!! 😂6 -
I usually only read and don't post much, but just wanted to say, as Candygirl said, Jackie O is on fb doing the same as she did on here, giving excellent advice on how to survive these times.8

This morning we have listed the foods we have in the house and planned for the next 14 days so that we can stay home and safe. Frozen fruit that no one liked has been made into a jam with homemade scones for snacking / puddings. A small frozen a!di chicken breast joint fed 4 yesterday and the last bits have been chopped & frozen to go into a homemade "Chinese" at the weekend with the left over spring rolls from this week's treat Chinese. Squabby veg has been blanched & frozen - will add that to some roasted Mediterranean veggies later in the week with chicken nuggets. Actually found 3 bags of chicken nuggets (we had bought them in for daughter's party which was cancelled) so any suggestions for 150 nuggets aside from chopping them in salads, wraps and with chips?
End of celery has been put into water to grow alongside the little gem lettuces we have on the side. Squabby oranges have been zested & juiced and added to freezer stash of cake making things.

Most of my pantry is in boxes in the guest room due to the builders being in, and only having a temp kitchen setup. Trying to avoid buying loads of doubles of things, just because I can't see them in the press before going shopping.
I've also been having a good think about what I want regular stores of in my new pantry when it goes in. Like, we eat pasta at least twice a week, so dried pasta and tinned tomatoes are always something we'll get through. Likewise tins of beans. We don't get through vast amounts of jam, so I should make sure there's never more than 5 jars in the press...all that sort of thing. Does anyone have a strategy like that? For outside Corona-times, at least.6 -
Glad to hear that Jackie o is safe and well. I have a wall in my kitchen painted with blackboard paint so yesterday I went through the fridge, made boxes on the blackboard for the next few weeks and then listed the contents of the fridge with use by dates into the boxes so I can quickly see what needs using up for that week.
I have a red cabbage in the fridge that was bought just after Christmas and is actually still ok so i'm going to try pickling it. I already have loads of braised cabbage in the freezer so wanted to try something a little different. I've been putting it off for weeks but finally decided that it needs to be done.
