    MONGOLIAN BEEF


    We served it on instant rice, for shame, with broccoli on the side, but the star of the show really is the beef – sticky, salty and delicious.

    to make Mongolian beef, you’ll need:
    450g beef steak, sliced thinly – now you can buy decent enough stuff from Tesco, but remember, we’re big fans of Musclefood and you can buy stir fry strips of extra lean beef from there that are perfect for this dish by clicking here)
    25g corn flour (4.5 syns)
    ½ tsp grated ginger (remember to put it in the bloody freezer after, don’t be buying new ginger every time!)
    3 garlic cloves, minced (use a microplane grater for your garlic and ginger and your fingers won’t smell so bad – buy one from Amazon for £9)
    120ml low sodium soy sauce (seriously now, use low sodium because otherwise it’s gonna be too salty and bad for your ticker)
    25g brown sugar (5 syns) (worth it – makes it sticky – this makes enough for four) (don’t bloody use sweetener, it won’t work)
    ¾ tsp chilli pepper flakes
    3 spring onions, sliced (remember – leave an inch or so of root and then pot them into water – the onions will grow again!)
    to make Mongolian beef, you oughta:
    place the beef onto a clean, dry tea towel (or kitchen roll) in a single layer and pat dry – you want it drier than a nun’s gusset
    add the meat to a bowl and sprinkle over the corn flour – toss (the flour) until evenly coated
    heat a little oil / frylight in a large pan over a medium high heat
    add the garlic and ginger and stir for a few minutes until it is nicely coloured
    add the soy sauce, brown sugar, red pepper flakes and 120ml water to the pan and cook the mixture for about two minutes to thicken, then pour into a jug and set aside
    heat the pan to high, add a little more frylight / oil and cook the beef until browned on all sides
    pour the sauce back into the pan and cook until the meat is thick, shiny and just waiting to be slid into your mouth
    add the spring onions, reserving some to garnish, stir and serve on rice with a bit of onion on top
    That’s Mongolian beef. IT’S JUST THAT EASY.

    So 11 suns for yesterday in total l, 5 for lunch out and 6 for 2 x g& slimline tonic.

    This morning my syns are already at an estimated 9 following a cooked breakfast by the other half. 6 for the oil used for the the two eggs and two rashers of bacon, and 1 and half each for each rashers- reasonably lean back bacon, cut off and fat I could. Had plum tomatoes with it so some speed and free beans. Will have an orange and a pear to up my speed and hopefully tea will be be veg heavy. We are likely to skip lunch after a cooked breakfast.
    Gin may be lower in syns than red wine but my head is suffering a little this morning
  • Haha, gin gives me a bad head too SoS, but then so does red wine. Prosecco is about the only thing I can drink now I'm old that gets me pleasantly chatty with no hangover.

    Pleased to report a 2lb loss this week! :j I don't know where this mojo has come from but long may it continue. 2.5lbs off my 1.5 stone award now and currently the lightest I've been since the end of 2017 :) I'm feeling a lot better but still not really seeing any changes in the mirror. Ah well, it'll come.

    Today:
    B - Banana
    D - Scromlette: Asda light Cumberland sausages (3), eggs, onion and mushrooms
    T - Mongolian beef (2.5) with airfryer chips and salad
    HEA - Milk
    HEB - None
    Syns - 5.5 as above, sugar in coffee (4), either wine (10) or hot chocolate (2) ....
    Weightloss: 14.5/65lb

    It's infuriating that it's possible to make a JP with tuna mayo for very few syns. It's just that most cafes just buy in that mush.:( Any of your toppings would be SW friendly denise.:)

    I'm going to listen to the football on the radio (not expecting to win:() and do some batch cooking especially as we've run out of Bolognese in the freezer. :eek:

    Today's EE plan:
    B: NAS grapefruit (F), HEB toast, HEA milk, scrambled eggs (P)
    L: JP (F) with cottage cheese (P), spring onions and beetroot (S)
    D: Aldi curry (P,,S) with HM pilau (F) and probably SW chips (F)
    Syns: curry 1, HP sauce 1, weekend wine:)

    Maman that was the idea with the toppings! DD2 and her partner could both do with losing a bit of weight. DD2 used to do SW but when she moved she didn't like the consultant of her new local group so stopped going but of course SW went the same way! I made my own low syn vinegarette for the salad, would have been free if I'd remembered to make some mustard up with the powder! Just used some grainy mustard (only 1 tsp) so negligible Syns between 4 of us (didn't count!).

    I also made a rice pudding using almond milk (my DD is lactose intolerant) so that used some of my 2nd HEA.

    DD was the only one who had tuna mayo; DH and I both had cottage cheese with a tiny bit of grated cheese. DD's partner had cottage cheese on his plate and grated cheddar on his potato. I didn't have any spread but everyone else did.

    They've just left to go home so will need to think about dinner in about an hour - the faggots are still partly frozen so they are sitting on the side to finish defrosting before I reheat them later. Looking forward to having them as haven't had faggots for a while.

    Denise . I must admit that when we have people round I give them SW friendly food whether they need it or not!:D

    This afternoon I've put Bolognese in the SC and cooked a beef in 'red wine' casserole for tomorrow. I've also made some leek and potato soup. It's turned out as a brown soup because I started it off with bacon bits. Tastes good though.

    Meanwhile my team have managed to play well and lose 4-0.:think:

    It's also been decided that our game on Wednesday will be on TV (another we'll probably lose) so that's likely to be a trip to the pub and more syns. :D

    Me too Maman. I don't want LOs of things I can't eat, LOL!

    I've decided that I'm going to do a load of batch cooking when I come back from my holiday (beginning of April) so refill the freezer. I'm running it down this month before we go away. I'm going to be using quite a lot of the things I've got in there. Hoping I can empty it and turn it off (it's outside) before we go away. If there's anything in there I'm hoping I can get it into my indoor fridge/freezer or might take some stuff with us - but can only take a few flat packed HM ready meals.

    Sorry to hear your team has lost today. Better luck on Wednesday!

    Looks like you'd better stick to G&T at the pub on Wednesday so you can more than you can with wine for far less syns!
