Goodness me, CCL... what a change in your boy. You know, he could genuinely just be showing signs of wanting to get back to a more normal, post-Lockdown life, with a greater variety of activity. Even if X-box is a person's favourite activity, it must get a bit boring after months of it. He knows he's got return to school coming up, he could just be unconsciously getting himself in a better headspace for it all. Sounds very encouraging, anyway!
Re aubergines. I have a veggie curry recipe where you wrap the aubergines in foil & roast them while you get on with the rest of the curry (easy) then you unwrap the aubergines & scrape all the roasted flesh into the curry, stir it in & it thickens it. The other thing I like to do with aubergines is even easier.... honestly CCL, Naughty Tortie could make this....... half the aubergine lengthways, top n tail it then cut into thin slices. Heat some oil in a frying pan. Add a couple of cloves of crushed garlic, then the aubergine slices & cook till they are golden brown & caramelising. While this is going on, get some pasta shapes on to boil & grate some cheese. When the aubergines are done, drain the pasta & add it to aubergine pan. Stir well & add salt & black pepper to taste. Pile into a bowl & top with cheese.
When I first made this, I remember taking Mr F a golden caramelised aubergine slice (he always said they were watery) & asked him to try it. He did & had no idea what it was! He was amazed when I said it was a piece of aubergine. Anyway, I like to grow aubergines in my greenhouse & these are two things I like to make.

I do roasted veg (leek, courgette, sweet potato,aubergine and anything else you fancy) roasted in olive oil infused for a few minutes with rosemary and thyme and a little balsamic vinegar sprinkled over it. I cut the veg into small pieces and stick in the oven for about half an hour. Then serve with a slice of bacon. You can put garlic in if you like it and dont go mad with the rosemary. You can hardly taste the aubergine as I am not keen on it either.

Finally caught up, you've been doing so well during lockdown.
The reason you want a new diary is because yesterday was a full moon and its about disposing of the old/cleansing/moving on etc
I always like to spend time on a full moon thinking about the future and how it will be better than the past bit not dwelling too much on the past because that's negative and not good at full moon.10 -

Just a quick sneak on before I take NT1 to the vet... I feel strangely uneasy about it - I hope it's just the likely cost that's stressing me and nothing more sinister than that. I don't like when I have this feeling because my gut is usually fairly accurate. I'm repeatedly telling myself I'm stressed about the cost and not her general health.
DS was up and on his form time session without nagging from me this morning, but... he hasn't come downstairs for any work just yet. That's more like the old him - but I won't start nagging until I'm back from the vets. I wonder if he has got a girl on the scene, although it feels unlikely unless she's a mad gamer as well. He hasn't seen anyone or gone anywhere.
Weather isn't so great this morning - it's cold and it's grey but I still feel like getting stuff done, which is a good thing I suppose. I need to stick a load of washing on and get out for a walk. Today's lessons are online and all of my marking for last week is up to date - so I need to plan and record tomorrow's lessons and then make time for a walk plus some knitting. My mam is trying really hard not to be impatient but she keeps asking me how I'm getting on with it so she's obviously desperate. It's a shame I'm so horrifically slow with knitting
Thanks for the ideas for the devil fruit foxgloves and ladyholly - I'll see how I feel about it when I'm in the kitchen later. Suppose I have nothing to lose by trying.
Time for the vet. Please keep fingers crossed and wish me luck.Not giving up
