    Lentil Flan

    240g red lentils
    480ml stock ( I use 2 vegetable cubes)
    Grated cheese - I use 4x HEA allowance as this makes at least 4 portions
    1/2 red pepper
    1/2 green pepper
    1 small onion
    2 cloves garlic
    Fresh coriander
    seasoning
    2 eggs
    Frylight

    Preheat oven to Gas 4/ 180C
    Put lentils in a pan with the stock. Bring to boil and simmer with a lid on till soft. Turn off heat and stand with lid on for 10 minutes. Fry the onion, peppers and garlic in frylight till soft. Mix the lentils and vegetables. Add seasoning and coriander. Add eggs and cheese and mix well. Bake in a 7'' round tin for 30/40 minutes till set and lightly browned on top.

    We like it hot or cold - makes a great picnic food, too. I've also added touch of curry powder for a spicy version.

    The sausage casserole sounds good and a great way to get extra Speed in. Think I'd prefer it with the butter beans. Wonder if it would work with the Linda McCartney red onions & rosemary sausages to make it veggie?

    I think the Tana Ramsey one would work well with LM sausages. IIRC it has rosemary (or maybe thyme) in it. I'd do a link but don't know how on my phone. :o

    Morning all. Looking like it's going to be another nice day here.

    No plans to go out today so if the sun comes out properly may sit in the garden with my kindle.

    Today's plan:

    B - sausages (2), egg (P), beans (P), mushrooms (S)
    L - mixed veg soup - potato (F), onions (S), frozen mixed veg mainly S but peas P
    D - duck breast fat removed (P); roast potatoes (F), roasted peppers (S), roasted onions (S), green beans (S), Brussels (S)

    HEA - milk - about 100ml
    HEB - none planned
    Syns - sausages 2; maybe a mini Vienna ice cream lolly 4

    Too many Syns last night so a bit of damage limitation for rest of the week.

    Afternoon all.

    Today's menu:
    B Toast (HEB) with spread (1), tinned tomatoes (S)
    L Left over lentil flan as yesterday, (P,S) with salad, (S) LTL mayo (1/2) Fruit (S)
    D Cod (P) in HM Parsley sauce (Milk (Part HEA), spread (1) 25g flour (4.5 between 2 of us)) New potatoes (F) various green veg (S)

    Hope the newbies are finding this helpful. Just a little tip - weigh your bread. The loaf I'm using at the moment gives 2 slices for 60g and is a larger loaf.
    Off to pick blackberries - free speed!

    Yes, because it can work both ways. I had to stop buying Sainsbury's 400g loaf because the slices were cut so thick especially the crusts. At the moment I'm having 1 slice of a 800g loaf but I'm still on the lookout for a flavoursome 400g loaf so I can have 2 slices.

    Not much happening here today. I like quiet weekends. :)

    Today's EE plan:
    B: NAS grapefruit (free), fried egg (P) with HEB toast, HEA milk for drinks
    L: JP with baked beans (free) with beetroot and pickled cabbage (S)
    D: Roast beef (P) with SW roast potatoes, broad beans (free), cauli, cabbage, broccoli, red cabbage, swede & carrot mash (S)
    Syns: HP sauce 1, HM gravy 4, wine syns:j

    I just checked and the wine is 13% so I'll have to allow extra syns for that. I should be OK though as I've only a few plans for syns after today until Thursday evening.

    Thanks for reminding me that baked beans are only Free now - I'd put they were Protein this morning but that's one of the things they changed last time wasn't it?

    That's right, apparently like other pulses they have protein but not enough for SW. I wonder if that applies to cannelini beans?

    I had to check broad beans too. I was putting them in with my Speed veg for dinner and then had to look them up. It was a great idea of yours to put the food values on the menus. I know it was meant for newbies but it's certainly helping me. :D

    ETA : I just checked and it's haricot beans in baked beans and they're still counted as Protein. How daft is that?
