help with mango glut please

Mmmm mango in natural yogurt sounds delicious, also I may have to peel and freeze at least one of them as they are too big to eat all at once.Does the flesh freeze o.k. I could really fancy it in a cheesecake perhaps at the weekend.

Do you like curries? Tiny little cubes of chopped mango in a dish are a lovely accompaniment instead of mango chutney. Or add some slices to a creamy Korma type chicken curry0

I've been given 4 large ripe (ish) mangoes today. Apart from eating them fresh as part of a fruit salad what else can I do with them? (I have most baking ingredients in)

Mango's (mangoes?? never know the right way of spelling it lol) are delicious. When I used to work as a dessert chef I would make Raspberry and Mango Roulade. I could eat a ton of that stuff.
Basically made a flat rectangular meringue on a baking tray (on baking parchment), sprinkled with flaked almonds. Once it's cooled, turn it over (so the almonds are on the bottom), cover in thick whipped cream, then thin slivers of mango (lots!) and raspberries (lots! lol) plus either raspberry or mango coulis, which ever takes your fancy. Then carefully roll it up in the parchment (that's the tricky bit). Quite fiddly to make but well worth the effort. Hope this helps£2 Savers Club 2011 (putting towards a deposit) - £588

a chicken and mango salad (or if you're veggie like me, chicken and quorn!) is particularly delicious - just chuck pieces of the mango in with chopped chicken breast and pretty much any other salad ingredients you fancy.

I bought 3 mangoes for a pound from the market yesterday - top bargain!! Anyhoo we scoffed one in a fruit salad, very tasty it was too. Anyhow, I can't think of how to use the other 2, any ideas please?:hello:
