help with mango glut please

    There's an earlier thread with lots of ideas, both sweet and savoury, for using up mangoes, so I'll add your post to it to keep the ideas together.

    Here's a recipe for an amazing trifle which uses 2 mango's,the only problem is the other ingredients will cost you a small fortune.. but it's worth every penny.

    Looks gorgeous but as there is only me at home I would be the size of a barrage baloon.Loks like I'll just have to pig out.I adore mango's and these two only cost me 89p for the two a bargain for a special treat

    you can cut them up and freeze them.

    They go well in salads if they aren't too squishy (but it's not really salad weather is it?)

    My mum used to make mango chicken, which is roasted chicken with the crispy skin, then she would cut slices off the bone. Take the skin off, a dab of mayo, a slice of mango and then the skin on top.

    Chicken and mango casserole - freezes as well if you make lots. Can't remember the details off the top of my head, but will rummage it out if you're interested.

    Peel them and freeze the flesh if you can't eat them all at once. Use it in smoothies, or mix with yogurt or ice cream. You could probably find a mango cheesecake or muffin recipe by googling.

    My freezer is full of mango at the moment, thanks to the tree in the backyard getting plenty of rain this year, and I'm struggling to come up with more ideas for it. Luckily I love mango smoothies. (And when I say the freezer is full, I mean the entire bottom shelf is all mango flesh, and there's still a couple of boxes that need peeling. I'm in heaven!)

    Are they ripe and ready to eat? Keep one in the fridge and one at room temp.

    Do you like curries? Tiny little cubes of chopped mango in a dish are a lovely accompaniment instead of mango chutney. Or add some slices to a creamy Korma type chicken curry

    If you have the ingredients, mix a little mayo with some natural yogurt, a spoon of spiced fruit/apricot chutney and some cold chopped cooked chicken and mango chunks. Tasty with salad, jacket pot, rice, or in a sandwich etc.

    Mango is good in a cold rice salad, with chopped up spring onion, peas, sweetcorn, cucumber, red pepper...whatevers around really

    I adore mangoes too, Jackie!
