Mango goes strangely well with chicken. Chicken and Mango salad is one of my favourite meals at our local pub. Go for it! x0

Just wanted to share a culinary success from last week...
My bf bought 2 mangoes when they were BOGOF in Tesco, we had planned to make smoothies, well we ate one and then the other one got put in the fridge and forgotten about... a week later i found it, it was pretty soft by then! didn't fancy a smoothie so thought i'd try something else...
I whizzed it up using handheld blender, then added a couple of teaspoons of sugar (not necessary but i fancied something sweet!), and most of a small tub of creme fraiche. Whizzed it all together and poured it in a shallow ceramic freezer-proof bowl. Stuck it in the freezer about 8pm... about 11pm I took it out and gave it a stir so the frozen bits around the edge got all mixed together, then popped it back in overnight. That evening I got it out of the freezer about 15 minutes before i wanted to eat it, it made 2 quite generous sized servings, and was SO yummy!
very quick and easy (though not instant!) dessert. Think I'll try it with some other fruits too next. mmmmmmmmmmmmmm.0 -

Today, I bought from work 1 and 1/2 kg of mango pieces ready to eat. Destined for the fresh foods counter for 50p. They are eat by today. So. what can I do with them. I expect they will still be ok tomorrow and as it is my day off., I wondered if I could freeze them, or make something with them and then freeze. I am going to eat a bowl full. But any ideas please.Anyone who lives within their means suffers from a lack of imagination:beer:

whizz them up and then freeze as a puree in small enough portions to add an 'ice cube' worth to an early morning porridge.I am the leading lady in the movie of my life

you can chop and freeze. Not much good for eating as fruit but great for smoothies - added value of being ice cubes as well...
it probably worked better in the summer0
