help with mango glut please

    hi you can put them in your mixer with milk and make a nice milkshake you can choose to add nuts and sugar as well

    You could freeze them if you think there's too much for you.
  • As others have said, just eat 'em! I keep the chopped fruit in a tupperware box in the fridge for up to 3 days.
    I would not recommend cooking them unless you want to make mango chutney, in which case I think you would need more mangoes.

  • Mango Sorbet

    Dissolve 100g of sugar in 150ml of water in a pan on the stove, boil for 3 minutes then leave to cool. Pour into the mango pulp (850g) and pop in your ice-cream maker.

    If you dont have one... you can use the freezer... I think you put it into a plastic tub and stick in the freezer for a couple of hours, then take out and beat with a wooden spoon. Back in the freezer for another couple of hours and beat again. And keep going until you get the right consistancy.

    If you have a blender, chuck them in with any other fruit you can get hold of with some fruit juice, flick the switch for a few seconds and you have a perfect pick-me-up for Sunday morning!!

    Got a recipe for Antiguan Mango Cake
    2 cups flour
    2 tsp bicarb
    2 tsp cinnamon
    3/4 cup cooking oil
    1/2 tsp salt
    1 1/4 cups sugar
    1/2 tsp vanilla essence
    3 eggs
    2 cups diced mango
    1/4 cup nuts (walnuts pecans etc according to preference)
    Mix all dry ingredients together, add everything else & mix well.
    Put into greased & lined baking tin. Leave to stand for 20 mins, then put in 350 degree F oven for one hour. Check after 50 mins. Cooked if knife inserted in middle comes out clean.
    It is GORGEOUS

    You lucky thing finding ripe mangoes! Usually they are like bricks from supermarkets they are so unripe and I find that some eventually ripen OK but others seem to shrivel but never ripen.
