help with mango glut please

I've got a nice ripe mango sitting in the fruit bowl......but I can't think what to do with it?
Anyone got any bright ideas - I've looked on the recipes thread but not much on there 'mango-wise' :think:0 -
I just peel it and bite into it:D ..Have also made a mango crumble before...delish!!

Make a chicken and mango rice thing!
fry up chicken, onions, chickpeas, aubergines or anything really.
Cook rice.
Add some spices like tumeric - anything african/middle eastern tastes good but I suppose carribbean would too
Mix it all in a saucepan with some liquid veg-stock or chicken stock from a cube.
Chuck in chunks of mango - leave to cook for 20 mins or so, or casserole it all in teh oven.
My 2 year old loves it and so do we!0 -
Don't leave it too long before you eat it - I've done that before. There doesn't seem to be much of a time from being ripe to gone off.0

Mango and banana-delicious!
I give my LO this, but Daddy loves this as a dip too with tortilla chips;)
