help with mango glut please

    I dice mango, pineapple and mandarin and toss through chilled cooked rice. Drizzle with any of the fruit juice that leaks out when diceing and serve as a sort of Eice Fiesta Salad alongside green leaves and grilled salmon steaks. HTH

    I'm living in Mango country here!! (sunshine coast, Queensland, Australia)

    Eat it sprinkled with lime juice
    Mix it in a nice natural yoghurt cubed
    Whizz it up with a lil milk, yoghurt and sugar to make mango lassi
    Have it with some ice cream
    Chop it finely with red onion and a little chilli for mango salsa
    Dry it in a dehydrator to a rubbery stage for a tasty snack
    Once peeled freeze it so you can use it in smoothies later
    cook it with a little sugar to make a nice pancake filling
    Once cooked with sugar whizz it up for ice cream sauce or cheesecake topping

    Can you tell I love them and they are sooo cheap here in season!!

  • Make a smoothie - use up any bananas, kiwi fruit, strawberries or raspberries ( fresh or frozen). if you can get a pineapple all the better. I always keep a mango in the fruit basket as smoothies are a great way to use up old fruit and get your 5 a day.

    Put all the peeled friut in a liquidiser and whirr. You may need some fruit juice - apple is good to get it going.
    The Universe will provide - all you have to do is trust.

    And give it a nudge in the right direction occasionally :o

    I chop mine into chunks if they are getting too ripe and freeze them. I can then add them to smoothies as and when I fancy them.
    WW Start Weight 18/04/12 = 19st 11lbs
    Weight today = 17st 6.5lbs
    Loss to date 32.5lbs!!!
  • Cut it into chunks, add cooked cold chicken and mayo and serve with green salad.

    I've used it in place of some of the carrot in a carrot cake recipie to make Carrot and Mango cake. It was very very nice!
  • My dd loves mango chopped up with chicken and pasta and sour cream. She loves mango and has it in a wrap with chicken too.
    You are only as old as the man you feel ;):p
  • How about dicing it and adding it a curry - a friend made me a curry once with mango in it and it was delish! She's vegetarian so it was a veggie curry, but I'm guessing that it would be nice added to a chicken version too.
