Refusal to accept the ticket as proof of payment and evidence of validity, and if you continue to pursue this contested charge, appears to be a case of unjust enrichment over and above the tariff paid.
This bit above does not make sense. Maybe: -

SAR request and letter submitted. Is there anything else I can/should be doing in the meantime?

You need to be reading, reading and reading again the NEWBIES FAQ sticky, post #2 until you can almost recite it. It is the best internet 'bible' on how to deal with a court case about private parking charges.

Then you need to find other threads but which are a little further ahead of you in the court process. Learn what a decent defence looks like, learn about the Directions Questionnaire stage, what a decent example a Witness Statement is (which comes further along in the process) and then generally about final preparations for court. Read only threads from (say) the last six months - nothing older.

You have to deal with all this - the forum cannot do it for you - so the better prepared you are, the better you will be able to deal with it.
Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .

I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.

Money Claims Online, claim form arrived today.
How do I best proceed? Newbie's thread has not really cleared my concerns.

That's right. Surely your Claim Form tells you that.

Doesn't the documentation that came with your Claim Form answer that too?

I have submitted the acknowledgment of service was today (27/02/2019).
With a Claim Issue Date of 20th February, and having done the Acknowledgement of Service in a timely manner, you have until 4pm on Monday 25th March 2019 to file your Defence.

That's nearly a month away. Loads of time to produce a perfect Defence, but don't leave it to the very last minute.

When you are happy with the content, your Defence should be filed via email as suggested here:
      Print your Defence.
    1. Sign it and date it.
    2. Scan the signed document back in and save it as a pdf.
    3. Send that pdf as an email attachment to CCBCAQ@Justice.gov.uk
    4. Just put the claim number and the word Defence in the email title, and in the body of the email something like 'Please find my Defence attached'.
    5. Log into MCOL after a few days to see if the Claim is marked "defended". If not chase the CCBC until it is.
    6. Do not be surprised to receive a copy of the Claimant's Directions Questionnaire, they are just trying to put you under pressure.
    7. Wait for your DQ from the CCBC, or download one from the internet, and then re-read post #2 of the NEWBIES FAQ sticky thread to find out exactly what to do with it.

Please read the NEWBIES thread post #2 and including bargepole's summary post there, about 'what happens when' and show us you draft defence for comments, not questions that we all now are already answered in the sticky!
