Crazy Cat Lady Chapter 3 - A New Beginning

So today has gone by in a bit of a blur. I've barely had time to breathe if I'm being honest. Woke up at just after 6am for the day having been awake twice during the night but getting straight back over - thanks to tv noise. I managed a full 7 hours of sleep so loads better, and I didn't feel as knackered as I have done.
However Monday is a bit of a pig of a day workwise. I have a full teaching day plus stuff after school. Then I have a meeting with the Head this week, and my observed lesson, plus I need to prepare some Y8 assessment, and I don't have anywhere near as many frees as I used to have last year. So I'm starting to bring lots home again - I've done 2 and a half hours this evening... And I didn't go to the toilet between 7am and half past four. Yes, I was that busy. Barely managed to shovel a jacket spud at lunchtime.
Have managed to sort a couple of things this evening since I got home - I've arranged with my handyman to get the bathroom wall sorted out once and for all next week. More cost, but it has to be done. Also rang the insurance company about the claim I have on the go for my tuxedo cat and her pain management.
Tomorrow I have a phone appointment with my solicitor so hopefully I can get that moving again sooner rather than later. I know in the grand scheme of things it hasn't been a long time but it's felt like ages to me. I can't wait to get that financial stuff settled so I can get myself on track to sorting it out. I laugh to myself at the thought of saving so hard for the wedding so we didn't get into debt, and now the amount of money I'm spending on the separation and divorce. Ah well.
I can't believe that I forgot to mention I attempted to channel my inner Nigella again yesterday by making chilli jam. Well, attempted. It all appeared to go so well but the consistency isn't great. More of a sticky sauce than a jam. I think it might have needed to boil for longer, but it tastes ok so I won't worry about it. In fact, I think I'll have some now - on a sarnie for my dinner.Not giving up

My chilli jam didn't set last time I made it, because I used preserving sugar instead of jam sugar. I hadn't realised they weren't the same :doh:(when I make jam as a rule I use ordinary cheap white sugar from Lidl). Didn't really matter though, just called it chilli sauce instead. It still tastes nice0

Exciting to have a shiny new television. I’m another one who has the tv on to fall asleep to, or will put it on if (when) I wake in the early hours too, to try and stop my brain thinking of random stuff. Well done for speaking to your m/h service, dealing with some of the overriding anxieties will hopefully give you headspace for other stuff.

Well done on the making of the jam :T. Must be that time in the term, I have an observed lesson this week and another next week. I know why they are done but hate the extra pressure.

Cat well done on the chilli jam, I find if you use the bbcg00d food recipe it's never as thick as fruit jam anyway, more of chill sauce in a jar :rotfl: well done :T
The recipe I use for the lemon drizzle tray bake. It's creat as you just chuck is all in and mix, no blending sugar to butter and folding flour in! I bake mine in a small roasting tray lined with baking paper. I confess to using lemon juice in the topping if I need to if lemons are not very juicy :rotfl:

CCL - I like being busy as it tends to mean you're being productive which ultimately pays off. As you said yesterday, a good night sleep makes a big difference, so be sure to give yourself a breather from it.
Earlier this year I made chilli jam but I'm struggling to find use for it. And you put it on a sandwich...? What else was on the sandwich...?0 -
So the chili jam probably did need to boil for longer. You could, if you could be bothered, stick it back in a pan and give it a while longer.
