I coat my chicken [or turkey bits in my case] in beaten egg first [I just put the egg in a marg pot and stick the lid on and give it a good shake] and then drop the pieces in breadcrumbs and porridge oats [value from Tesco] with a few herbs and seasoning thrown in. I lay them on a baking tray and bake them at 200C for 15 mins turning half way through.

Hi, as the OH is a butcher i've seen the light and decided not to buy chicken dippers anymore and use the FREE chicken breast that he brought home- but i'm not the best cook so what do i do - breadcrumbs/batter? I dont really want to fry them.
And can i freeze any leftovers?

they're dead easy to do and I don't see why you couldn't freeze them.0 -
Normally when I buy chicken breasts I make goujons with them ( a bit like dippers ). Cut into strips, coat in flour, dip into egg, coat with breadcrumbs, then cook in the oven on a baking sheet sprayed with a low fat spray. Its a bit of a faff but much healthier than the shop bought ones, and the kids love 'em! You could freeze them but i'd just cut them into strips with out any coating on them, make sure the chicken breasts wern't previously frozen first.0

I've got some chicken breasts in the fridge and wanted to make chicken nuggets in breadcrumbs. How do you all cook yours? Is it best to deep fry, shallow fry or oven bake? And do you boil your chicken breast first, and then make the nuggets, or cook from raw??

Hi,
I make mine from raw chicken, cut into goujons (or cut smaller for kids) and then dip in egg, then seasoned HM breadcrumbs. I chill mine in advance, put on a tray and brush with a little oil. Oven bake them for 15-20 minutes, turning once during cooking

I do the same as Angela, but I coat them in flour before the egg, as I find this helps the egg stick the chicken a bit better.

My sister recently used up some corn crackers (the ones that look like translucent yellow plastic!) as crumbs for fried chicken. She said it worked so well she's going to force herself to forget she ever tried this to avoid eating every day! (Just in anyone, like her, bought some of these crackers and found they stick to the roof of your mouth and taste of b- all.)0
