    Hi astep,

There's an older thread on making homemade chicken nuggets that should help so I've merged your thread with it to keep all the suggestions together.

My sister recently used up some corn crackers (the ones that look like translucent yellow plastic!) as crumbs for fried chicken. She said it worked so well she's going to force herself to forget she ever tried this to avoid eating every day! (Just in anyone, like her, bought some of these crackers and found they stick to the roof of your mouth and taste of b- all.)

Yes they do, they taste of polystyrene!!! In fact, they are quite handy if you are getting a bit low on packaging for eBay ....:rotfl:

    My recipe...
I've just recently got into cooking properly for my family as I cringed every time they ate things like processed chicken nuggets. This recipe, like all of mine, was made by searching around finding a few recipes and modifying them to taste/budget/what's in the cupboard.

2 chicken breasts, skinned, boned and cut into bite sized pieces (My local butchers sells sliced fillet which is easier to prepare)
    1 tablespoon of olive oil
    1-2 cloves of garlic, (pressed)
3/4 c. bread crumbs, finely ground (I buy my breadcrumbs)
    1/4 tsp. onion powder
    1/4 tsp. ground pepper
    1/4 tsp. cayenne pepper
    1 tsp chicken bouillon

    1. Preheat oven to 200c
    2. Combine Olive oil/garlic/onion powder/pepper/cayenne pepper.
    3. Drop all the chicken in above mixture and mix it together with fingers.
    3. Put bread crumbs in a little bowl/plate and roll chicken pieces around in it.
    4. Stick in oven until bread crums start to brown. You can drizzle oil over them and they are less dry, but we don't like oily food and we dip the nuggets in honey/mustard and ketchup anyway.

You can pretty much make this with or without all the seasoning or you can add other things eg.. dash of curry for spicy nuggets, or some cheese etc...

I made these for my very young kids last week and they all came back for seconds and thirds. I made enough to freeze some but I had nothing left to freeze!

    I've been Money Tipped!
I was thinking about those 50p morrisons deals, the chicken portions seem small but could do a half decent nugget or popcorn bit. Or at a push crispy chicken from the local chinese

I can remember watching Hugh Fearnly-Chickenstall and he did a pop corn chicken recipe a few years ago, i have mostly every herb and spice (dp got me a large spice rack last year) just wondering which would go nicely.

Also for nuggets, its that just a plain batter like fish batter?

Many thanks (no doubt there is already a thread for chicken :o )
  • I make Nigella's chicken dippers/goujons for my family sometimes - they are delicious and there are probably ways of making them cheaper too (but I don't know of any - all suggestions welcome!!).
The recipe I use is -
Beat a chicken breast with the end of a rolling pin to flatten, cut into slices/strips and soak overnight in buttermilk. Then crush a box of ritz crackers up and roll the chicken in the crumbs. Bake in the oven at about 180 for about 20 mins , turning a few times....
As I've said - easy, delicious and you know exactly what the kids are eating!!! ( no mechanically recovered meat!!).

my kids love my children nuggets really simple and quick to cook

cut a chicken breast up into bit size pieces (the smaller you cut it up the quicker it cooks) dip in egg then breadcrumbs (just put a silce off bread with some spinach into a blender....two or three mins and turns it into green breadcrumbs) heat a fying pan with a little oil and cook we call them our hulk nuggets :rotfl:

With regards to chicken nuggets I coat them in egg and then bread crumbs [I whizz up all those frozen ends of bread I've been storing]. I don't like getting my hands mucky so I sling all the cut up pieces of chicken into the egg in a marg pot with a lid and shake and then do the same with the crumbs in a lidded pot. I'm a real wuss! I then lay them out on a lightly greased tray and bake in the oven. They're very nice cold in lunch boxes aswell.

my mum makes little chicken nuggets for my little brother, using chopped up chicken breasts dipped in flour, then egg, and then into a sandwich bag that has crushed up cornflakes in it - makes them nice and crunchy when fried!! :D
