Cooking for one (Mark Three)

I've got same weather as PN, and I guess so has Brambling, cold & wet, with sleet mixed in
Nothing else YS worthwhile any where, spent a massive 35P in w8rose on bananas, got the free for members food mag, I only take it 'cos it's free, nothing in there that I would ever cook, all larks' tongues with Moroccan spices simmered in Yak's milk type of fodder;)
I love soda bread as well, also not made it for yonks, would've gone well with the soup
The only extra I added to the soup was knob of butter for initial sweating, and some OOD soft cheese to add to the creamy texture, but I think it would have been just as tasty to have left them out as full on Vegan
Weather carp here as well Farway started with a loud clap of thunder right overhead that scared the !!!! out of the cat and my 12 miles trip to work had torrential rain, hail, sleet and sunshine. There was the one benefit of a double rainbow out the office window, one really bright
. I'm disappointed I went through my W*itrose mag and not a larks tongue recipe in sight
like you I flick through then throw away.
I agree that some soups benefit from sweating off the leeks and onions in a bit of butter especially simple ones, most of mine tend to be veg thrown into the stock. And thanks to Wednesday and Farway I'm now reminded I haven't made soda bread in a couple of years
Do you have a fail safe recipe for baba ganoush Caronc ?
Lunch was sweet potato, squash and pepper soup from the freezer with some crackers and dinner was the last of the gammon with bubble and squeak, runner beans and asparagus with the scrappings of the piccalilli jar. I must add a new jar to my shopping list. I still have a small blob of mash potato left so may make a fish cake tomorrow
I'm currently putting off looking for my car insurance if I put it off much longer I'll have to renew and that's not very :money:Life shrinks or expands in proportion to one's courage - Anais Nin0 -

Cut slits in a aubergine and pop slices of garlic in it (a couple of cloves worth) so you can't see them, coat in olive oil and roast in a medium oven until the aubergine has basically collapsed and the skin is charred (about an hour). When cool enough to handle remove skin and blend the flesh in pulses with the pan juices, juice of 1/2 a lemon & a little salt until smoothish making sure not to discard the garlic. Add more oil if too thick but avoid getting it too smooth. Alternatively roast a couple of unpeeled garlic cloves in the pan, squeeze out when cooked into the flesh. Drizzle with olive oil, pomegranate seeds (optional) and chopped mint to serve. I'm making pitta chips to go with it.:)
Some folk add tahini but personally I prefer it without - finely chopped toasted walnuts are also nice on top or stirred through it.0 -
Thanks Caronc.
. Last time I tried I dropped the aubergine when I took it out of the oven and it smashed on the food

Saves mashing/blending I suppose and what's a little dirt/cat hair between friends
:rotfl:
ETA - aubergines are on SO at Tesco just now
Trip up to Mr Ts I think at the weekend. I may try it on my sister Sunday as I'm trying to broaden her horizons with food as she can be a little set in her ways :rotfl:

Evening all! I just thought I'd pop in quick, and see what you're all up to.
Food for me this past week has been successful. The chicken I roasted on Sunday lasted me 4 decent sized meals, until Thursday night. I had the exact same meal of chicken, potato croquettes, broccoli and gravy, 4 nights in a row. But it was so tasty, I didn't mind it at all. I roughly costed it out, and each meal was about £1.20, which I didn't think was bad, for a meat, a carb and a veg.
Todays meals were a bit on the naughty side... I wanted to pop over to the retail park to visit Poundland this morning... So went into McDonalds for my breakfast. I just had the sausage and egg muffin. I don't need the coffee, because I can just as easy have my coffee at home, where it's "free".
I had said coffee and a couple of biccies for an early lunch. Then had a chicken curry in a can for a late tea after a couple of hours tutoring.
Otherwise, I spent my time packing my suitcase and carry-on, as tomorrow I'm making my way down to Gatwick, to stay overnight in an off-site hotel a couple of miles away. As I'm off to Italy for the week with my mum at crack-of-dawn Saturday morning. Flight is at 6:45... So it'll be a 3am-something alarm... Still, all for a good cause!Because it's fun to have money!

Brambling - hopefully your sister wont like it and then there is more left for you.......:rotfl:0 -
Hello.
I hope you don't mind me dropping in. It's just to say I was reading through these posts as I have been made unemployed so money it tight and it was the title of the thread that caught my eye. Well I have picked up some good information here.
I am trying to always have soup on the go as it is fairly nutrtious and costs very little. I found a receipe for Carrot and Tomato soup and this works out about 80p for a big pot. I am always on the look out for carrots and tomatoes reduced at the supermarket.
Anyway, thanks for the tips I found here.0 -
I have to go out in 20 mins and I just put a pizza in the oven, I didn't check the time!
I will have half of that for breakfast and leave the rest for tomorrow.
The last of the leek soup for lunch today. And thanks to Wednesday and Farway I'm now reminded I haven't made soda bread in a couple of years
Ooh, send me a loaf, please, lol.:p0 -
Good morning everyone,
Hello steve900, glad you are finding the thread useful. I'm big soup fan (though this week's use up effort was disappointing:o) and it's hard to beat both on cost and tummy filling:).
The lovely sunshine forecast yesterday hasn't appeared, it's overcast, cold and trying to rain!
Groceries have been delivered and put away, the SO aubergines are a really good size for 49p. I ordered four as I thought they might be quite small so will have spare after I've made the dip. I find they do keep well though so I'll use them up next week at some point either stuffed or as moussaka or keema:).
Lunch will be the last of the smelly cheese in a wrap with salad and tonight it's a steak bake with oven chips, sprouts & green beans.0
