I've had a smoothie and then 2 toast with vegan cream cheese and the last of the Marmite.
I've got 2 more containers of rice so will have a pineapple and veg stir fry tonight with sweet chili sauce and tamari.
I might make a veggie soup with what I have left in the fridge too.0 -
Just thought I should put the soup on now so I can have it when I get in. A potato, a big carrot, 3 leeks, marigold bouillon veggie stock and some curry powder.
The orange pepper, onions and other carrot can go in the stir fry tonight.:)2025 GOALS

It was so warm out that I didn't fancy the soup. I did have a bowl though and put the rest in the fridge.
I bought avocado, fresh coriander and limes as I want to make salsa and have a salad instead of the stir fry I was going to have.:)2025 GOALS

It's same here, could sit in sun if wanted to it's so nice
I should really be joining you in salad but I'm already committed to beef casserole again

I added more veg to bulk it up, now in a low oven to cook through, dumplings will be in there later
Spot more gardening, planted crocosmia "Lucifer" corms, I've always liked that variety but never found the corms at sensible price until this week in L's:j

Your soup sounds tasty Wednesday:)
I'm not huge a fan of raw strong onions, fine with a little in coleslaw etc. but prefer spring onion in sandwiches etc. or to soak the sliced onion in a little vinegar with a pinch of sugar first.
No warm sunshine here today though it cleared up late afternoon - we have a light frost forecast overnight!
Another quiet day here, had a good natter with my elder son on the phone and my Dad and sister (separately) both popped by for a cuppa.:)
Lunch was a egg (1 down - 19 to go:rotfl:) & tomato sarnie and an apple. Dinner is going to be roasted jerk spiced chicken thigh, cauli, sweet potato, onions and mini corn cob. I've a small half leg of lamb defrosting to cook tomorrow, I reckon it will do 2-3 portions max so I'll probably just roast it with rosemary & garlic, have some hot for dinner and keep the rest for sandwiches.:D0 -

. I went walking with my sister along the Downs Link which is where the old railway track used to be before Dr Beeching
. We managed 8 miles and I ended up walking in a tee shirt as it was so warm
. I was told 8 miles was a gentle start as I have new walking boots :cool: I just wish I had washed my bedding before I went out, hopefully tomorrow will be as nice
We had a late lunch in the cafe outside overlooking the lake watching the swans and paddle boarders a tuna melt panini before walking around the lake. She tells me she did 12 miles on Tuesday so I need to be prepared next time :eek:
It's been a while since I've walked that distance so I should sleep well tonight, I really cba to cook dinner so just airfried a quorn fillet and had with a flat bread and salad followed by some pineapple and melonLife shrinks or expands in proportion to one's courage - Anais Nin0 -
