I don't know how authentic (or otherwise) this is, but:
Quantity for one:
1 small aubergine
about a tablespoon of chopped red pepper
half a garlic clove
a large tomato
salt/pepper
2 spring onions
half teaspoon cumin
pinch each of coriander and cinnamon
summat green to garnish (eg chives)
Preheat oven to 220C/Gas 7.
Slice aubergine in half lengthways and scoop out flesh, leaving a thick shell. Place in large casserole dish/on baking dish cut side up and set aside.
Prepare filling - chop aubergine filling, pepper, garlic, tomato and spring onions very finely and mix that together and add seasonings.
Put filling in aubergine shells. Either use spray oil (or I just put a couple of tablespoons of water instead in base of casserole dish - to prevent sticking).
Cook for 20 minutes.

My alterations were that:
- I added a lot more tomato than that to the filling.
- I added a good squeeze of tomato puree as well to the filling.
- I served it with couscous and put a dollop of fat-free yogurt on that, scattered a bit of sumac on top, scattered around some pomegranite seeds on it.
(I'd have probably chucked a handful of pine nuts on top as well - if I wasn't dieting at the moment).
In the event I only ate one of the half shells with the couscous.0 -
That's pretty much how I make it though I use a generous splosh of olive oil, lots of parsley and a pinch of Turkish chilli flakes. If I have any I add a few chopped walnuts or almonds as well.

We've just had a thunder storm complete with monsoon-like rain:eek:, my poor dad got caught in it and arrived here absoutely soaking..... It's cleared up a bit now but probably not for long going by the clouds.
I'm for a domestic day today, I want to give the place a thorough hoover and mop the floors. With all the wet weather they are looking pretty manky.
Tomato soup and a sandwich will be lunch. I haven't decided yet what to make tonight for dinner though after all the pasty talk yesterday I may dig a lurking HM one out of the freezer. It's probably the most ancient food item in there as I'm pretty sure I made them while my younger son was still living at home and he moved out 2 years agoso it could do with getting used or ditched;).

Just reading your talk of tinned pasta! I love a tin of spaghetti hoops! Had some only yesterday! Although I remember once, as a student, buying a tin of ravioli... Never again!
I've just returned from a trip to Tesco for mostly fruit and veg. Took me ages to find the cucumbers - they'd moved them. After going up and down all the aisles, I eventually them on an end display. My Tescos have also just installed a "squeeze your own orange juice" machine... I'll be interested to see how long it lasts. Freshly squeezed is lovely (I have squeezed my own OJ in the past), but I can't see than many people bothering. I didn't see the price unfortunately. I have to look next time.
Made the mistake of needing petrol on a Friday morning of Summer holidays! It's a big station, but a lot of pumps out of order, so had quite a wait.
Lunch today will be a chicken and salad wrap, and for dinner I've got some of those little Chicago Town pizzas in the freezer, so I'll have one of them with a bit of veg.
When I went out this morning, I went in just a t-shirt, and it was distinctly nippy! A cool wind blowing. I think Autumn is on its way! This is one of my favourite times of year - weather wise. Still quite nice, but just the hint of a chill.
I was in Switzerland 2 weeks ago, and one of the towns we visited is due snow on Sunday! Just goes to show how short the summer season is in ski resorts!
Plan for the rest of the day is folding washing and running the hoover round. The lounge could do with a good old tidy as well.

Re tinned pasta - mac cheese is utterly gross. Mum used to like it, but I just find it nasty tasting.
Years ago I bought some tins of cannelloni. That was quite nice/handy, it's no longer for sale.
Hoops/spaghetti/alphabetti - not brilliant, but it's something I will often keep in the cupboard just in case I ever need something quick. I probably tend to eat one can/year.
Spag bol - nice on a bit of toast, but pricey. Tesco used to do a large can for 20p, but that's nearly 45p now I think. At 20p it's a nice cupboard dweller; at 45p you're in the realms of thinking about it.
I had two sausage rolls for (early) lunch. I've already done a "really grotty stuff" tip run and gone to get a click/collect item ... then I receive lightbulbs so put up lampshades and lightbulbs ... I've just dabbled about with a bit of bramble clearance, but stabbed myself a few times with the little thorns, so stopped... got a pile of bindweed and brambles that's close to one black sack in size.
I also dabbled with splashing a bit of wood preserving stuff on a table.... left that where I lost the interest.... need to do the other side, when I CBA to turn it over.0 -
After 2 days of Koftas treated myself to Friday supermarket takeaway
So today so far is a teacake, salad sandwich for lunch with left over kofta garnish then tonight is a steak and cheese BBQ flatbread pizza from Asda create your ownHuge so it will last twice but at 2.30 that makes it a bargain. Got coleslaw and salad to accompany.

Bit later clocking in today, a "Volunteer leaving do" earlier which mucked up my routine
Apart from that a normal sort of day, dull & cooler
Jackpot YS in L's, nukeable oriental MFO, 3 of them. Dinners & freezer top ups sorted. One is black bean, other two are chicken Jalfrezzi [sp?]
Lunch was ham & salad bits sandwich
Then out to leaving do, where I scoffed too much, usual sarnies, one was prawn stuff, not keen on prawns but thought I'd try it. Still not keen on them. The huge slice of M & S walnut & carrot cake was excellent belly buster, as were the chocolatey cup cake things:o
Now I'm too stuffed to eat a YS Chinese, but OK for date so maybe tomorrow
I think it will be another sandwich later, with some more of my LO crumble & maybe Greek yoghurt
I've got to have a freezer sort to get the 2 MFO in, plus my stewed blackberry & apples really need to be frozen now before they go furry

We have had some corkers of rain showers today but it's cleared a bit now though still showery.:) It's got decidedly chilly now though - one of those evenings when I know it wouldn't be that long until the heating goes on for a bit in the evening.:(
I got the jobs done that I wanted to but the edges of my floors could do with a good "on your hands and knees" scrub which there is no way I can manage that so I'm just not going to look at them with my specs on.:rotfl:
I'm feeling a bit grotty tonight, bunged nose, scratchy throat and the beginnings of a yukky cold sore on my lip so the yukkyness is probably due to the cold sore virus:(. I had a lot of bother with these earlier in the year but at least this time it's nowhere near my eyes! A medicinal glass of red has been poured which I'm sure will help me feel better:D.
I've decided the [STRIKE]ancient[/STRIKE] vintage pasty can lurk in the freezer for a bit longer. I really like beans with a pasty but have had them twice already this week and don't want to open another can or I would have more to use up. I had a cheese salad sandwich and a mug of tomato soup for lunch, the rest of the soup has been frozen for when my Dad comes for lunch next week. I've jointed a chicken (minus the wings which I had last night) so two leg portions and a boned crown have been frozen. I'm thinking on Sunday when my son is here we can have the crown stuffed with haggis for a roast dinner. Tonight I'm going for an easy option of mince and tatties. I have a tub of savoury mince in the freezer so will microwave steam so Ayrshire tatties to have with it. There's loads of veg in the mince already but will cook some peas to have with it. Peas are a must with mince & tatties in my book as we always had them with this when I was growing up and it doesn't taste quite right without them:rotfl:0 -
Thanks for the weather warning Farway when I booked the time off I forgot it was the bank holiday weekend, I going down Sunday early to avoid the traffic tomorrow so it looks like I'll get the rain instead
Flubberyzing I'm going to West Dorset and will catch up on family when I'm down there and then I'm going to Cornwall, on the coast 5 or 6 miles from Looeweather permitting we should get lots of walking in.
Will dabbing neat alcohol on the cold sore help Caronc Gin not winenot sure if that's an old wives tale or if it works?
Quiet day at work todayso the boss sent me home at 4pm
I know it's because we are due to get really busy and until we recruit and train we will be short staff so it will be paid back later :cool: but I appreciated it. I got caught in heavy rain driving home and Caronc's monsoon seems to have worked it's way down South as it's tipping down now
Lunch was quiche salad and dinner was cba so jacket potato with HM coleslaw and grated cheese, I've turned a blind eye to what else was in the fridgeI'm also regretting being naughty and adding butter as well as cheese
since having my gall stone removed too much fat isn't always a good idea, pass the Rennie someone (or a :money: alternative)
