Forgot to say the crispy shredded tofu recipe was excellent, super easy to make and really tasty. Loads of possibilities re flavour options as well. LOs for lunch today.
I keep meaning to try that as I keep seeing it all over the place on social media. Vegans I talk to online use tofu to make vegan kebab meat too. I'm going to amend my Asda order to add tofu and try it and your recipe too. :)

Some people use a grater but you can also use a potato peeler.

I used a box grater, it worked really well. I can see how a peeler would work if you wanted bigger strands.

A miserable winter weather day here - had snowed in the early hours but the rain washed it away by mid morning. Has been grey, cold and wet all day.

Stripped bed, dusted and hoovered plus washed kitchen floor before swimming this morning (once the snow had gone 😉). Pile of ironing and remade bed this afternoon (pillowcases were part of the ironing.

LO chipotle chicken and black beans in a pitta with cheese and lettuce for lunch. Salmon, new potato and cherry tomato traybake with green beans tonight.

Gets oddly warm here from tonight 🤔

I've also seem several recipes using grated tofu and it's been on my list to try a recipe so I may try it 🙂

Hospital visiting this morning before it rained then I came home and caught up on my washing.  My sister and I went to one of the local garden centres for a cup of tea this afternoon and shared a slice of Bakewell tart 😋 it was heavy rain by the time we came out a couple of hours later.

Boiled eggs and soldiers for lunch.

Turkey mince chilli with rice and tenderstem broccoli for dinner

  • Toast with hoummus this morning. Vegan Russian salad for lunch. It tastes good. It's just like Russian salad made with vegan mayonnaise. Vegan mayonnaise is even cheaper than normal mayo and it's just made of rapeseed oil. It doesn't make you feel oily and unhealthy so I may make the switch permanently. I have zero tolerance for the seed oil phobia! I don't eat trans fats.

    Pasta bake (yum) tonight.

Need to make chickpea curry tomorrow or the next day. I wish I could find the chickpea and aubergine curry my friend gave me. It's on paper somewhere in my flat. I'll just google a recipe. I better had not need to go to the shops again. I am a big believer in recipes.

Dull and grey, with rain spitting in the wind, it is milder though, nearly tropical outside at 11C

I had a look online for roller blind repairs, it must be a very common fault, lots of repair kits, including new chains. I'll get a kit ordered and then wait for DS / DGS to arrive, hopefully before Christmas.  :D
Bit tiresome not being able to use  a ladder safely, it's only two screws to remove the blind but have to use common sense, of course

Lunch, last of the BLT sarnie
Dinner, RM spinach & ricotta cannelloni, with some fresh, ex Christmas, cheap veggies on the side

    Good morning everyone,
Must be the day for chickpea curry, we are having this one tonight Chickpea, spinach and egg curry recipe - BBC Food .
Another grey and wet one here. I need to catch up on my voluntary admin and then I want to turn some of the vat of ragu into lasagnes for DS1 & DIL's freezer stash. The rest will get portioned and frozen for future meals.
Yesterday I used some of the cheap Christmas veg plus lurking fridge veg to make a pot of winter veg soup so will have some of that for lunch today.

I was going to make a curry for dinner tomorrow as I'm eating out tonight, Quorn and chickpea as I accidentally ordered two bags of frozen Quorn pieces in the shopping.

I have had a toastie and a chai latte today so far. I have a class tonight and a meal so I will have something small for lunch.

I was surprised when I tried vegan mayo when I first went vegan as I really like it and I never liked eggy mayo.

Sun shining and a gusty wind so happily I got my bedding on the line and dried this morning.

Lunch was an egg salad and dinner tonight is chicken kiev, mashed potatoes, brussel sprouts & broccoli.
