    Good afternoon everyone,
It didn't have rain yesterday, not constant but torrential, long lasting showers. Dry so far today but heavy showers forecast for later. It's not cold but it's not super warm either. I'm hoping to get some of my bedding plants potted up and just keep my fingers crossed they don't get completely battered. I want them to be well-established by the time I go on holiday towards the end of the month. My balance is still very iffy but it's a job I can do seated and DS2 will move the pots for me.
There's some HM coleslaw LO from last night so I'll have it for lunch with a ham and tomato sandwich.
Trying a version of this tonight Mexican Rice Skillet Recipe | Dinners, Dishes, and Desserts . It's recipe DS2 used to made when he lived in Newcastle though I'll need to sub the Rotel tomatoes with tinned toms and chilli. I'm only going to use 250g of mince and will reduce the rice a bit too so hopefully there's not lots of LOs.

I had a nice day out yesterday, no cfo at all - coffee shop lunch and a chipper tea  B)

Found a long forgotten tin of sardines in the cupboard, I'll have them on toast for lunch.

Popped some chicken thighs in the SC for tonight and having them with new potatoes and asparagus.

Can’t beat a chippy tea! Never did have one when I moved 🤔

Sunshine and showers sort of day but very breezy, when it did finally stop raining late afternoon, the load of towels dried quickly.

Went swimming late morning and enjoyed my posh fishfinger sandwich when I got back. Chinese pork shoulder steak tonight with noodles, sugar snap peas, water chestnuts and sweetcorn. LO pork will get turned into something tomorrow night…

    Good morning everyone,
Dry so far but supposed to get very windy this afternoon. In view of this I decided not to pot up my bedding plants yesterday. DS2 filled up the greenhouse troughs instead ready for me plant on the tomatoes and cucumbers and we'll need more compost for the bedding.
Despite reducing the recipe the Mexican one pot dish made lots so LOs galore. Just as well it was tasty!  I don't think it will freeze very well so we'll use up for lunch the next couple of days. I reckon we're going to get 6 portions out 250g mince and if making again I'd probably leave out the mince and maybe add some lentils or beans instead.
I've a meeting this evening so I made curry for dinner yesterday. Goan Chicken Curry Recipe | Curry Recipes | Tesco Real Food DS2 will sort out rice and salad while I'm online.

I don't have them very often, they have become so expensive but it's a nice once in a while treat; added bonus it wasn't my turn to pay  B)

Trying to create a bit of freezer space so used up a portion of lentil soup for lunch it's been in there for a few months so definitely needed using.

Plenty chicken leftover from yesterday so having it cold tonight with loads of salad stuff; lettuce, ss peas, tomatoes and a carrot, nut & sultana salad.
