Cooking for one (Mark Three)

Hi as a long time lurker I hope you don't mind if I join you, it's nice to know that some of my CFO ways are normal whatever my sisters may say
I usually enjoy cooking and use it to unwind at weekends but during the week it's easy to be CBA which unfortunately has lead to CFJ (can't fit jeans) so I'm trying to combine healthy eating with reaching the bottom of my freezer I fear it is a losing battle.
Left over pork in cider for lunch and duck breast with new potatoes and Pak Choi for dinner. Best not mention the Percy pigs for afternoon snack.Life shrinks or expands in proportion to one's courage - Anais Nin0 -
Welcome to CFO Brambling, sounds as though you'll fit right in. There is no such thing as "normal" when it comes to "Cooking for One":rotfl::rotfl:
PS_ What is this "reaching the bottom of your freezer" malarkey , I lost that battle many moons ago:o0 -
Thanks for the welcome Caronc. I think the last time I saw the bottom of my freezer was when the last one died August 2010. I did a recent freezer audit I have a drawer full of HM ready meals and a mountain or should that be sea of fishLife shrinks or expands in proportion to one's courage - Anais Nin0

2010 sounds fairly recent to me:rotfl::rotfl:
I'm actually not sure when one of mine was last defrosted but it certainly over 10 years ago possibly 15. It's very old and I suspect the shock might be too much for it:eek:0 -
My freezer plan to work on the basis of using the 1½ drawers (1 for food; the ½ drawer for bread/bread rolls/crumpets) and keeping one drawer entirely empty is working as a way to focus....
It does make me eat what I've got ... yet I still always have the spare/empty drawer capacity in case I buy something large or awkward... and there's always space to freeze new things.
It's not entirely empty - I keep the chips in that drawer, but that's just to make it easy to use them, there's still always space to squeeze the chips into the single drawer I'm keeping food in if I had to "just prove a point".
I'll stick with this method for now....
Since I've been buying/eating a few more fresh veggies and a few more freezer foods .... my stock of tins has accumulated without being used. So maybe I need to go through those and eat the things I really struggle to fancy just to get rid of them ..... I've still got a stray Fray B pie I must've had for over 2 years"
I last defrosted my freezer late last year, Sep/Oct time I think, so I could start again and know that I went into Xmas with new/nice food and not a freezer full of old "don't fancy that" stuff.0 -
Me - I'm adopting the phrase "CFJ" - ie Can't Fit Jeans:rotfl:.
I can fit the size 14 label jeans - but I can't fit the size 12 (Real Size -ie 1970s measurements) jeans - at the moment.
On that note - heading for breakfast asap - to have a 2 hour gap in time for an exercise session (missed yesterday's:o). Dance later today - and I haven't thought what to have for dinner and that cauliflower is still lurking in my fridge looking at me meaningfully...:rotfl:
It gets harder to think "Just what..." when you've not got any cheese in....
On freezer food note - I decided I'd probably hate frozen corn on the cob (though I like it fresh). So I scraped all the kernels off it and threw them into a sauce - so that's them used up. Now wondering about the bag of frozen brussels sprouts I bought a while back - and betting I don't like them any more than I like most frozen vegetables. But must it give a try and see....0 -

A busy start to the day but worth it as it gets meals ready to freeze and yogurt for the whole week
I am making jamie`s super shepherds pie today and only had 400g lamb mince to start but it was expensive so is being stretched nicely. I am up to the last stage before assembling for the last long cooking session, instead I will portion and freeze in foil dishes, except for today and tomorrow. I think I will get 6 good servings. Plenty of veg in this and I used my food processor to chop but was still on my feet, with all the stirring. I am putting my own topping on and have chopped 6 garlic cloves, fried to brown in organic beef fat from a jar (k2 plus flavour) and have added a whole string bag of cooked sweet potatoes to the garlic and mashed
I am also making yogurt from a litre of guernsey milk and now sat down for a short break with real black coffee and some jarlsberg and tomato on toast. I might count veg/fruit portions today, 3 so far and 4 by lunch as I will be eating a banana
Kale/spinach/garlic stir fry with lunch. Berry/apple crumble about 2. I always have lunch at 12. I reckon that will take me to 12a day today, easily. I still have nice snacks too, not had any nuts yet so will mix walnuts/almond/pistacheos in a small handful and take out either a fruit scone or lemon cake and there is atill the dark yummy chocolate, some are much nicer to nibble and vivani is one of them, I can nibble 2 thin pieces for a long time. Last meal/snack is always at 5 ish, oat cakes and smears of peanut butter. Then chamomile soon before bed and I should, again, sleep like a log for which I am very grateful and will change the time a bit at a time so as not to disturb my circadian rhythmn which now works perfectly0 -

Weds - hm spicy chicken pizza,

The little one part of fridge freezer is full with gluten free bread, fish fingers and gf breaded chicken , hm hotpot and lo beef dinners . 1 drawer is dgson none gluten-free stuff!
He's here tonight so it chicken jalfrezi with rice and poppadoms.
He's also here sat night and all day Sunday, his mum's sending pizza for him sat, and we're having chicken Sunday.
I need to think what I'm having on sat???Focus on contribution instead of the impressiveness of consumption to see the true beauty in people.0 -
I thought I had a tin of beans, but I didn't.
Breakfast was therefore one crust of bread, toasted, topped with half a 15p can of spaghetti hoops ... and I popped a poached egg on top "as it's breakfast time".
Eating out later today at some point, so that'll be it for today probably.0
