  • I made a variation of the salad I have been having and it wasn't nice. I had run out of tomatoes and herbs and i used white beans. Not very nice at all! I had three mini sausage rolls too as I felt hungry as I slept for almost 10 hours last night. I did wake up at 4 am the day before.

    It feels a bit chilly and I need to wash my hair so I am going to put the heating on.

  • Still quite spring like this morning but there’s a funny kind of sky probably showing a change is on the way. Did a quick visit to the recycling centre with the old tv this morning glad to finally get rid of it as its been playing up for ages.
     
    I have some leftovers from last nights stir fry so that’s any easy lunch for me and I had some peppers left so roasted them with some courgette, onions garlic and rosemary which I'll  use in a vegetable lasagne for tonight.

  • I went for a walk on the beach as I got a new Fitbit. My husband got my old one. I wanted some toast when I got in, but I forgot I ate the last of it yesterday. The shopping is being delivered later so I had some crackers with Flora and I steamed the last of the broccoli with some lemon and garlic. It isn't that cold out, but it is very windy.

  • Nearly forgot to post.

    Had a nice, steady wfh day - got all the things done I needed to plus another task that was so much simpler than I had imagined once I had a bit of brain space 🙃

    I’ve also done some voluntary admin ready for a meeting tomorrow, been swimming and then watched the second episode of the second series of Time (only just got round to it this week) - very different to the first series but very good again.

    LO pasta for lunch and beans with toast for early tea before swimming. Nice and easy today!

    Considering I only had one day off I was playing catch up with my emails, not helped by a 1.5 hour meeting at 9.30am where I had to repeat myself several times that yes I had seen there were emails that came in yesterday but I had a chance to deal with them especially as they involved checking the system 🙄 although I did have the satisfaction of my manager complaining about a large project coming which will probably be May before we have to do work on it and saying Not my problem' 😁

    Cheese and LO coleslaw sandwich for lunch with a side salad. Dinner at my sister and nephew's a nice roast chicken followed by  apple pie 😋 then we let my nephew beat us at a board game  ;)

    The yellow warning rain arrived, it's tipping down so grey & soggy outside

    I keep amending my online Asda list, some of the problem is offers expiring and new one popping up. 
    Not buying stuff I don't need, but sometime just an alternative size or brand changes, medium orange instead of large for instance.
    Just changed to get “meal deal” offer, two small pies with free bag of frozen chips, I was buying pies anyway. I'll get there in the end

    Lunch, something on toast
    Dinner, more cold roast pork, not with salad though with this weather

    Good morning everyone,
    Tipping it down here. I have physio at lunchtime after postponing last week and boy am I needing it. Suspect it will be a tough one but worth it.
    Frank is at the very hard work stage and we've been kept going. Much as I adore him I'm glad he's going home tonight as it's full on. 
    LOs for lunch and tonight it's pasta with a HM spicy aubergine and tomato sauce. I baked sliced aubergine last night while the oven was on so just need to make the rest of the sauce later.

  • I had smooth PB on sourdough toast for breakfast. I said yesterday that I resolve to get a decent amount of steps in by midday and it was typically pouring with rain this morning. It eased off a bit so I went to the beach and back.

    I saw online that someone was making a cauliflower cheese soup so I googled a vegan one. It is just cooking white onion, cauliflower and veg stock and then blitz it up with vegan cheese, plant milk and nutritional yeast. I have all of that so I'm going to make it now even though it is quite early for lunch!

  • It wasn’t a very nice morning here either so I caught up on some household stuff.
     
    Lunch was another pitta with salad, coleslaw & mortadella. I picked up a couple of nice portabella mushrooms when I went shopping the other day and thought I would try stuffed mushrooms with a feta, kale & chilli mixture and a sprinkling of balsamic vinegar - this could be a bit of a hit or miss kind of tea  ;)

  • Yep, rainy and grey here too. Usual meetings Wednesday at work - two long ones and a short catch up in between. In bad planning, I also had a voluntary meeting tonight.

    More soup and a bread roll for lunch. Made a quick Thai red curry of LO roast pork from the freezer and green beans for tea, served with noodles.
