  • Ugh, what a miserable day - the sun tried a couple of times but was scared away after a few minutes 🙄. Could quite happily have stayed under blanket all day but roused myself to do some domestic chores (have clean floors and fresh bedding 😊) and go for a swim. I’ve also made lunches for two office days and done a bit of prep for tomorrow’s dinner.

    Lunch was scrambled egg and mushrooms on toast. Pork stroganoff, noodles and green beans tonight. Might have a square or two of chocolate with cuppa in a bit 😉

    Heavy rain here most of the day so I decided I had nothing I needed outside and hunkered down ☔️ And got indoor jobs done. 

    Lunch was marmite on toast with a fried egg on top.  I made a pan of Italian Wedding Soup (some tweaks to fit ingredients) using some lurking chicken mince to make the meatballs.  The chicken mince had been YS but I was very keen on it when I ate the first half of the pack but it did work in the soup and was very tasty.  Plenty of LOs for the next few lunches

    Another wet & mild day, at least it's saving gas CH money, today's highlight will be change bedding

    Lunch another BLT sarnie, dinner, nuked LO beef stew. Same old same old for today :(

    Good morning everyone,
    Working out how to eat interestingly, avoid waste and not spend a fortune when you are CFO takes a bit doing pamsdish. :) Please share any ideas you have as inspiration is always welcome. 
    Very dreich here today. Yesterday ended up being more productive than I thought it might and we got the last of the annual plants cleared. (well DS2 did lol!) Today is the last time the garden wheelie will be emptied until the spring.
    Hector managed to run into a very deep, mucky, stagnant puddle on his walk yesterday. He was filthy and the smell was terrible. He's had two shampoos but is still a bit whiffy so it will be another bath later.
    Off to make soup (lentil & bacon) and then get my admin head back on. Cooked savoury mince yesterday to make a mince round (plate pie) for dinner. LO chicken with salad in wrap for lunch. 
  • I had to get a blood test for the first time in a year and I forgot how hungry fasting makes me.

    I went to Coop afterwards and bought food. I just had an onion bhaji sandwich and two jam doughnuts. Green tea too.

    I have the rest of the soup I made for lunch and I might have a houmous salad sandwich too. Not for a while though as I feel stuffed!

    Today I  cooked a swede and potato mash in my instant pot,  cooked cavello Nero at the same time,  mash made 3 portions,  I pop into bags squeeze the air out and seal,  then spread around inside the bag, freeze flat,  this defrosts quickly and can be used as a side dish or topping,  served with a portion of bbq pork from the freezer 
    Do I need it or just want it.

    thanks for the reminder Wednesday I've my annual visit to the vampire due, but it's such a pain here as the only place in town to do it is the hospital so there is at least a hour wait and  nearer 2 hours first thing 

    CFO is all about left overs and squeezing stuff into the freezer 🙂 I tend to freezer portions of root veg mash (swede, carrot, turnip, parsnip and celeriac) and braised red cabbage which aren't practical to make in small portions so I tend to make about 6 portions.  Freezing mash potato on its own isn't always successful for me 🙄 but on the odd occasion I make mash I menu plan for colcannon or bubble and squeak later in the week.  Menu planning is useful when CFO you can plan to use that half tin or packet if you don't want to make four portions or fill up the freezer with HM RMs.  On Sundays I often cook enough veg to last me for another couple of dinners usually green beans, broccoli or carrots this allows me to limit hob time and allows for working late.  I'm not a fan of microwave veg

    Lunch was a large mug of Italian Wedding soup 😋 it's maturing very well and will do for the next couple of lunches and I may have to freeze a portion as I made more than I planned.  My fridge freezer is getting very noisy and at approx 16 years old I fear is planning to die soon, I need to make enough room to put everything into the other freezer just in case so trying not to cook and freeze anything

    Dinner was tandoori chicken, made in the AF with a vegetable rice and green beans.  I found a tub of stewed plums in the freezer so that was dessert

  • Just a day today, nothing exciting. Does feel chilly tonight and I can hear the wind.

    Office day so one of the lunchboxes of mixed grains, roasted peppers, sweetcorn and blue cheese that I prepped yesterday for lunch. Made creamy tomato tuna and sweetcorn pasta tonight, served with broccoli and green beans. There are, of course, LOs for tomorrow’s lunch 😋

    Still dull & windy here, but rain has stopped at last. Oops, spoke too soon, it's turned into a Monsoon out here now, standby Brambling :o

    Nothing exciting on food front, I've an empty fridge & full freezer so looks like whatever I spy first is for dinner
    Lunch, maybe a cheese toastie?

    All being well, I'm off to Marks for a mooch tomorrow, I know I need bananas but aprt from that it's a YS hunt and with luck a nice cauli

    Good morning,
    I use my pressure cooker to batch cook mash and root veg pamsdish. Brambling I find mashed potatoes freeze really well as long as you don't add any milk or butter to them before freezing, otherwise it can go a bit grainy.
    Hector has had another shampoo and has lost his "eau de vase bottom" whiff - until the next time lol! Three shampoos in 24 hours have left him very fluffy.  :lol:  
    Manky weather here too Farway.
    Admin hat on again today after I unearth some pork mince - it's not where I thought it was in the freezer and I'm fairly sure it hasn't been used. Assuming I find it, it's JO gingery mince in black bean sauce for dinner if not it will be a chicken version. 
    HM lentil & bacon soup for lunch. 

    ETA - found the mince.  :smile:
