    Sounds like a lovely meal Caronc and worth tackling the stairs.

    other than a trip to T Express for suet, as my old packet was way way out of date and last time made bullets not dumplings 😬. It's been a pottering day.  I threw a mutton casserole into the slow cooker this morning using port rather than opening a bottle of red and a handful of Pearl barley, finished with dumplings.  The smell tormented me all day and does taste very nice, I'm letting it cool so any fat can rise to the surface overnight, it will be tomorrow and probably Tuesday or Wednesday dinner with the rest being frozen 

    After all the talk on here lunch was scrambled egg on toast with mushrooms.  Dinner was a small steak and chips with veg.  I also sampled the mutton casserole and a small dumpling, just to ensure it tasted ok 😁

    Good morning everyone, 
    Dire weather here, the bottom of my garden is like a pond! I'll need to splosh to the bin later but apart from that shan't be straying. I have voluntary admin to do and need to clear some freezer space as I'm hoping to get my festive butcher's order soon.
    I've been intrigued for a while about using mayonnaise as a marinade after seeing various recipes online. Yesterday I skinned and boned chicken thighs and marinated them in a mix of mayo, garlic, chilli powder, sage, rosemary, lemon juice, black pepper and a tiny splash of oil for a couple of hours. I then breaded the coated chicken with a mix of blitzed stale bread and packet sage & onion stuffing mix. I baked the chicken for about 25 mins at 170C. It's a keeper, the chicken was beautifully moist & tender and the crumbs crisped beautifully. We had it KFC style with a baked spud, corn cobette, roasted peppers and gravy.
    LO chicken for lunch and tonight I'm making Ainsley Harriot's spicy sausage patties with bbq sauce, green beans, carrots  and baked potato wedges (I cooked extra spuds yesterday).

    Dull morning with rain due later but I'm not going anywhere

    That meal does sound super Caron, and the 62 stairs is daunting, not sure I could do it except like vest with base camp & staging stops on the way up. I may have t do something like that come Christmas as DD's if I want to see my granddaughter's plants, which I do

    The banger & bean crumble turned out OK, but the veg was slightly crunchy because I failed to appreciate the simmering on hob was to soften the veggies before going in the oven :o , however I did make a breadcrumb topping because I had two LO stale bread end:smile: Next time I think a splash of L & P's Worcester would also help and I'll make it in my cast iron Dutch oven pot so I have room to fiddle around

    Lunch is a sarnie, type TBA but could include salad bits
    Dinner, probably salad despite the weather, I need some fresh green stuff, probably make some HM AF chips to go with whatever I decide, boiled eggs? I've loads of eggs

    That looks delicious Farway, yes it does need that wee bit hob time for the veg. I thought the crumb added nicely to it. This is my one 


  • Another weekend of being out twice so yesterday was a lovely roast beef dinner followed by sticky toffee pudding 😋. Just some olives and houmous with a glass of wine last night…

    Home day today. Was grey and rainy so was glad of my jacket spud at lunchtime, filled with cheese and the rest of the coleslaw and served with salad. May have over done the cheese as it was sweet potato and halloumi traybake tonight, with chimichurri and salad.

    Monday came around too quickly 😐 I did lay in bed trying to convince myself it was Sunday. The furry alarm doesn't care what day it is as long as he has his breakfast and is let out 🙄 At least the IT issues we had at the end of last week were fixed over the weekend 😁

    I took out some tomato sauce for lunch and it had venison meatballs in, I must remember to label LOs when I freeze 😁 a nice surprise.  Dinner was a portion of the mutton casserole and dumplings I cooked yesterday with sweetheart cabbage and mash potatoes, there was carrots in the casserole.  I froze three portions and kept one out for Wednesday.  It was very tasty I just need to note what I put in it 🙄

    Good morning everyone,
    Another wet and grey day here, I'm pooch sitting but I don't think he'll be snoozing in the garden today. DS2 will walk him at lunch time and this evening.
    I revisited an old Ainsley Harriott favourite last night that I've not made since the boys were at school! Sausage meat, cranberry & spring onion patties with a bbq type sauce with baked potato wedges. It was a good as I remembered.  :) We had carrots & green beans with it.
    Yesterday I cooked a large pan of ham & veg broth so will have some of that for lunch. Tonight it's stuffed pasta with chorizo, HM tom sauce & HM pesto.

    Rain overnight but slightly brighter for the moment

    I don't have a furry alarm but the radio controlled one has gone mad and is not updating, thinks it's a Monday in January 2013, tried all sorts but I think it has caught whatever my PC has, time [no pun intended] for the bin with an E Bay replacement already on it's way

    Caronc your AH recipes made me rummage upstairs and I unearthed my old tatty copy of his meals in minutes book, I feel that I need to find some old favourites 😁

    it sounds like all your electricals are dieting at once Farway  :s I fear my fridge freezer, washing machine and TV are all on borrowed time and unfortunately all about the same age approx 14/15 years.  I need to ensure I can put all my frozen food in the new freezer which means no more batch cooking 😁

    Another  freezer rummage produced a small portion of goat mince ragu which I had with pasta. Dinner was also from the freezer, chicken Kiev, new potatoes and corn on the cob

  • Rainy and grey again here today but strangely mild.

    In the office today and because I made soup at the weekend (broccoli and Stilton this week, the Stilton is still kicking around), it was soup and bread for lunch.

    Swimming tonight so early tea of beans and poached egg with toast. Just had some malt loaf with a cuppa….I blame the bake off 😉
