I did check coverage, using their coverage checker. It said "very good service" for both indoors and outdoors (I'm in West London). I even tried an old Three SIM from my wife's PAYG phone, as I knew that TPO used the Three network, and that was also fine. So I really don't see what else I could have done

Now I'm wondering how on earth I can try out another network without committing to spend before I even know that I'll be able to use it.

    ????

Get a free PAYG SIM from the respective networks websites.

I wanted to try Plusnet mobile next, but they don't do free PAYG SIMs. In fact many of the MVNOs don't seem to offer that

Always a good shout on EE's network, 50p at check out I think and you still get 10 texts, 10 minutes & 100Mb(?) of data on the card to really check.
