  • Hello again
I made a recipe from the grocery challenge thread today, aubergine and courgette bake I think it was called, it was very near the top anyway and it was quite tasty and better still the aubergines, courgettes, tomatoes, parsley and basil were home grown and I served it with home grown potatoes and green beans, so frugal as well. There's enough for me tomorrow as well.

Toad in the hole tonight with roast potatoes, carrots and parsnips (left from yesterday) plus broccoli and gravy.

Then made some shortbread to eat during Great British Bake Off!

OH was out so I was lazy and had tinned vegetarian spaghetti bolognese. At least it's got rid of a tin that's been lurking in the pantry for a while!

Mac & cheese with pancetta with garlic bread.

Yes that does look like no/low carb to me too.  Have booked the day off tomorrow so I can try to walk it all off.

OH treated us to a (little) Chinese. I had chips (guilty pleasure) and plain Chow mein with stir fried beansprouts.
  • I had pan fried mushrooms on cous cous with brussels sprouts, green olive tapenade and hm apple sauce followed by a coffee.
