    @Brie - This recipe was in today's Guardian How to make courgette (and other summer veg) fritters – recipe | Food | The Guardian and if you read the comments by other readers below the article there are loads of tried and tested versions there that are worth a look too. I feel sure you could turn these into croquettes and then brush them with oil and bake them in the oven with very few or no changes to the basic recipe.

    In the spirit of eating what's in the fridge, freezer and larder I had an avocado dressed with freshly squeezed lime juice and urfa chilli paste accompanied by a fridge bottom salad with a truffle oil and shallot dressing and am now enjoying a coffee with a handful of walnut halves.

    We had pasta tonight, I bought fresh spaghetti from m&s,  it was rtc, but I found it hada strange texture.  A bit chewy, I had mine with quorn bolognese, the others had seafood
     sauce with added chorizo and the baby plum tomatoes that needed using up.

    I then fell asleep on the sofa for a couple of hours, hence me wide awake at this hour.

    Ended up rushing about before gym last night so threw together a salad - incl some bits from Olio (lettuce and radishes) Had a great haul the other day - 8 tiger rolls, 5 pastries, 2 pretzels, a bag of radishes, an iceberg lettuce and two mini watermelons - not a jot wrong with any of them just dates. Can't believe the food wastage like that.

    leftover tandoori chicken and salad for my lunch.  I shall warn my manager before I get too close when I talk to her this afternoon.  the salad has onion in it and the tandoori is HOT!  but oh so tasty!!  I love lunch leftovers!!!

    Husband found a couple of locally-made cauliflower and red pepper boil in the bag curries in the freezer, so we had those with konjac rice. Pretty good actually.

    I’ve defrosted a pack of minced beef, and will use some of it to make burgers to have in brioche buns with salad tonight. We particularly like Ainsley Harriott’s recipe for ‘brilliant burgers’ from his Barbecue Bible cookbook.

    I’m keeping a handful of the mince back to mix with rice and other bits and pieces for some roasted stuffed peppers for tomorrow.
