    I need to sort out a recipe for courgette, I have 4 in the fridge.
    top & tail and split lengthwise and grill or bbq

    cut into chunks and add to a baking tray with a selection of similar sized chunks or onions, potatoes, beet root, peppers and a big slug of olive oil and herbs.  take off your rings and stir them about with your hands, then bake in the oven.  give your hands a bit of a wash and massage under very warm water and you get the added bonus of very soft hands. 

    shred into a salad

    shred fry in butter as a filling for an omelette

    slice fry in butter to slightly brown and then bake with cheese on top.

    spirialise or cut into thin strips and use instead of pasta  (been meaning to try this)

    ratatouille  (eaten often, but never made it myself)

    "zucchini" bread (same as the above)

    We had the Harry Ramsden oven fish and chips,  from Iceland, with home made mushy peas. It was surprisingly very good.

    Had leftovers from the other day chopped small, added cucumber, plum toms, beefsteak toms, capers and walnuts and then tossed them all in a vinaigrette made with balsamic. Followed by apricots and coffee, hot this time as it has cooled down so much here I had to put on a cardie.

    @Deleted_User -  I'm thinking of giving this recipe a try sometime next week if the PYO farm I'm visiting on Weds comes up trumps Crunchy courgette pickle recipe | BBC Good Food. I decided on that one because of all the comments which make it clear it's delicious and easy, plus a lot of people say they've varied the ingredients when they didn't have one or two from the recipe and they still got good results.

    Sausage, new potato's and beans from the garden, carrots. Raspberry and cream for dessert. I need to sort out a recipe for courgette, I have 4 in the fridge.
    I slice courgettes and add a layer or two in when I'm making lasagne,  either a mince or veggie one. Just put in some sliced courgettes on top of a pasta sheet, then spoon your mince / veg mix over that, lasagne sheet again etc. Sometimes i start with a layer of courgettes at the bottom of the dish too.

    Dinner last night was a lovely turbot from the fish mongers in town.  Despite a bad cold the other half did a fine job cooking this on the Weber, simply pre-treated with oil and herbs and chucking a jigger of pernod on it while cooking.  We don't ahve any pans large enough for this size of flat fish but by having the fish on a rack which elevates an extra inch from the heat it comes up a treat.  Salad with tomatoes and lemon juice was the only thing with it.

    Tonight was supposed to be the half a cow large rib of beef from New Forest Meats. Again the intention was to bbq but OH is pleading illness (wimp!) so I'm doing pasta and meatballs instead.  There was some mumbling about needing a medicinal bloody mary to start but that's not something I'll be in charge of!

    I batch cooked a ginormous vat o' Bolognese sauce this morning, so we'll be having some of that as spag bol and the rest has been portioned up for the freezer. For dessert I have made mango fool, with pureed mango, whipped cream and home made thick custard which has used up the glut of hen's eggs nicely.
  • Corned beef and salad, HM potato salad and beetroot, followed by raspberries and cream.
