The intention was a cheeseboard today, but as we have several lots of leftovers in the fridge that need using, so an easy one 😊

Just made a vat of veggie chilli to use during the week. OH starts and finishes work early (before me) so often we don't eat at the same time which means he doesn't bother cooking. Having something he can just take a portion of and heat quickly means at least he gets something decent.

Not sure what dinner tonight will be though, chilli always tastes better after at least a night to marinade after making so prob won't be that. Might see what's wedged in the freezer to use up.

Turns out dinner tonight was pasta with tomato and mascapone stir through sauce, some crumbled goats cheese and chopped med veg. OH had a bowl too and a portion in the fridge.

Combined these two recipes in order to use what I had in the fridge French onion tart with cheesy thyme pastry recipe | BBC Good Food for pastry and Goat's cheese & red pepper tart recipe | BBC Good Food for the filling to make an open tart.

The cheesey thyme pastry was brilliantly easy to make and resulted in this delicious case.

That's my recipe notebook in the background in case you were wondering.

The red onion filling was cheap, easy and very tasty too and I'll definitely be repeating that part of the recipe and maybe making mini tartlets with it one day.

We had roast lamb yesterday, so today I am using up some of the leftovers to make a lamb biriyani.

Had roast beef yesterday and today I have had sausage and egg roll as I had a meeting that only finished late and was pretty hangry by the end of it so needed something quick and comforting.

Treated ourselves to out outish dinner tonight (not full out out as I was driving and it's a school night)
I had wasabi salmon followed by market catch which was a whole sea bass ...so may grow gills and fins tonight, could come in handy with this weather! Banoffee cheesecake for pud.

OH had baked camembert, fish n chips and a cheese board....so may be in for some interesting dreams tonight!

Had a fabulous table right next to the window and looking over the river with the geese pootling about. Really got an appreciation for them this year seeing how organised they are, esp with creches for the goslings.
