    Had spinach and feta pie, brussels sprouts and roast portobello mushrooms with a g and t and will have an easy peeler after I've washed it all down a bit with a coffee.

    Richmond veggie sausages out of the freezer for breakfast/brunch tomorrow. Not sure what dinner will be yet,  something again between the Euro matches.

    We had oven chips, egg, baked beans and husband had ham with his. Easy dinner on a Friday.

    @kerri_gt I have also got plans for some Richmond veggie sausages tomorrow, the fresh ones are easy to squash together, so may become a vege sausage and egg muffin or scotch eggs.

    Poached cod fillet in parsley sauce for us tonight. I'm not really a fan of it to be honest, but I make it occasionally as it is one of Mister CJ's favourite meals. Will serve with peas, and a little mashed potato for him but not me.

    I'm making a lemon meringue pie for dessert, to use up more of the egg surplus.

    At the moment it looks like lamb legs on the barbeque, with rice and pitta breads. But the weather forecast keeps changing so it might have to be swapped to chicken and parma ham pasta.

    I left the meat free Richmond sausages in fridge.

    I made the Richmond vege bacon into a BLT. It was really nice, I had a side of padron peppers.

    Husband had calamari, padron peppers, bread, tomatoes and some spanish cooked meat.

    @JIL thats a good idea about making patties. I bought 3 * packs of 16 when Asda had them on 3 for £10 offer a while back. This is the last pack of 8. There's 4 sausages still in the feeezer (the fresh ones freeze well btw)

    We didn't get round to brunch but i cooked the suasages for dinner and we had them in french bread with HM oven chips and beans.

    @C_J I love cod in parsley sauce. I don't make it often as I'm lazy (no other excuse) and OH isn't mad keen on fish, but i do sometimes go retro and have fish in the bag from the freezer (then it's easy to do for one person). Usually have it with rice.

    Used the leftover brussels and mushroom from yesterday to make a frittata by dint of adding garlic, spring onions, cumin, carrot, eggs, ricotta and some very elderly cheddar with chillis which turned out surprisingly well. Eaten with a tortilla and mixed green salad dressed with red wine vinegar followed by hasty pudding made with a heel of bread from the freezer, scrapings from a jar of jam and f/f yoghurt and then the obligatory coffee.
