Had a use it up dinner of omelette topped with elderly mushrooms and a postage stamp piece of Cheshire cheese with brussels sprouts and a piece of chilli bread followed by an easy peeler and a coffee.

Just had some Impossible Pie for lunch - not sure it's my fav, it's a little bland, needed something to bring out the broccoli and salmon a bit more - but it's perfectly edible.
Dinner tonight will be my roast from Sunday I didn't eat. Think OH might finish off the curry from last night.

Made these burgers with use it up dried porcini instead of shiitake Vegan Seitan Burger Recipe - olivemagazine. I found the vital wheat gluten here Holland & Barrett Vital Wheat Gluten 500g | Holland & Barrett (hollandandbarrett.com)
For anyone else my top tips are to grease your baking paper (I didn't and you can see the result below) and don't bother with the kimchi mayonnaise.

Other than that, the method is weird but once you've got your head round it it's a lot easier than you think it'll be.
ETA: the burgers I left to cool have peeled straight off the baking paper with no trouble at all, grrr, wish the recipe had told me that.
