Reheated a couple of chicken goujons from the freezer (HM) with some LO chopped potatoes from last week's curry which I roasted, and the LO veg from Sunday's roast.

Last night I had turkey roast dinner with the leftovers from Sunday. Tonight I have had chicken enchilada. Have planned out my meals up to next Thursday when I get an online order and it involves emptying the freezer of stuff that's been lurking in there 'un-fancied' for ages!

Throw it all in a traybake tonight.

Well two trays really, onions, baby potatoes, peppers, courgettes, tomatoes, fennel, aubergine. One tray had vege sausages.
The other had chicken thighs and chorizo.

I made a pesto to go with it.

We had quite a big mezze lunch so aren't too hungry for dinner. I'm just making a fish finger bap each .... and I am really looking forward to it!
