Had beef chilli nachos with cheese and guacamole, then the last of the blackberry crumble from the freezer from when we went picking in late summer.3

Today was a beef short rib, done in the slow cooker with carrots, celery and leeks, plus some mashed potato.3

The Husband is making a low carb cottage pie with organic beef mince, frozen mixed veg, canned ratatouill plus celeriac and swede instead of mashed potato.2

Fish in the bag with some LO rice that was in the freezer.
Also finished the last of the roulade from xmas too.
I've got a portion of beef casserole out of the freezer for tomorrow too, going to slice over some cooked boiled potatoes and heat it all up in the oven for a hot pot type meal.Feb 2015 NSD Challenge 8/12JAN NSD 11/16

Jacket potatoes, roasted veg and vegan kievs for daughter and I.
Husband had jacket potato, salad, ham and a breaded chicken thing that I found in the freezer.
Rest of roasted veg went into a pasta and feta thing for my lunch and into couscous for daughter.2 -
Monday was lamb chops with rice.
Last night we ate pasta mixed with pesto, bacon and tomatoes. Chocolate buttons for pudding.
Tonight is curry. I've used a jar but have mixed in pork chops, butter beans, butternut squash and red peppers with rice. Something from the Christmas chocolates for pudding.2 -
JIL what vegan kievs did you have? We have the Plant Kitchen ones from M&S (OH had one with his xmas dinner!) which we both like (I'm not veggie but will eat anything and sometimes it's just easier/nice to cook one meal for us both) but am interested if there's any others out there.

Last night we had slow cooked beef ragu with buttered tagliatelle, broccoli and peas. Not sure about tonight - I have a sausage casserole that I made yesterday in the fridge (hadn’t realised the sausages were a bb 5th Jan but still smelt ok so cooked them), but I don’t fancy that. Might be a freezer-forage-with-chips sort of tea.Books read 2023 - 49/753 -
