OH has been picking this evening.
I had some pasta with some sauce thats been in the fridge for ages, used up a frankfurter I'd lobbed in the freezer last night and fried some sliced mushrooms with a bit of balsamic vinegar splodged in. Oh and some mozzarella added in.

  • VintageHistorian, that sounds delish.
It turned out quite nice! A touch too salty, I think the parma ham might have been overgrilled while I waited for the mozzarella to melt. But me and hubby both enjoyed it so it's definitely one I'll be adding to the rotation (although maybe not on a regular basis, I can see us getting a bit bored of it if it was every month).

I’ve just taken a pack of turkey mince out of the freezer, so tonight will be spicy turkey burgers made with chopped red onion, garlic and chilli, served with a big mixed salad and some coleslaw (but no bread buns). Pudding will be mixed berries on a meringue as I have some egg whites to use up.
  • Lunch today will be left over chicken in a sandwich from last night’s dinner. Dinner is pork chops with rice and veggies

Last night was a chicken & mushroom pie but used grated parsnips on top instead of pastry, got enough left over for my lunch today. Tonight we are having Cawl which will see us for two days,
