XxIl also chuck a Baked potato in the microwave and finish it off the oven whilst im in the shower, doing housework etc etc

I agree with KLEW about batch cooking, saves a lot of time and stress when you are busy, and don’t forget KISS meals (keep it simple silly) things like a quick omelette, throw together a salad, some simple spaghetti with some pesto ran through it, bread and soup etc good luck with the course 👍
dinner tonight chicken and chorizo over a green salad, added jacket spud for DH
I love the KISS idea for meals. Jacket potatoes are a great idea cooking whilst I'm doing something else, perfect my type of cooking 😁
I will have a look for the Hairy Bikers cook book. I tend to look on YTube for ideas and here of course.

Pix, if you have a slow cooker it can be a godsend especially in the winter months. A nice veg chilli or casserole, lovely and hot and waiting for you when you get in from work!
Tonight, in a game of "here's one I made earlier", I shall be defrosting some chicken tikka massala to go with some rice and maybe a cheeky veg samosa. I messed up my menu plan a bit this week, I was certain I had a large pack of beef mince in the freezer which was going to form the basis of three nights' meals but when I looked I realised it was diced casserole steak so I left it in there for another day. It's thrown me a bit! The chicken tikka can fill in for tonight (I love a mid week curry!) and I'll have a deeper rummage in the freezer later to see what there is to fill in for tomorrow.1 -

One of the restaurants we tried during Aug is still running Eat Out to Help Out offers, so we went back today to try out some more of the menu. It didn't disappoint

Tonight we are having MIL round for dinner, we used to do this weekly before lockdown, we’re hoping to get back to that routine- Covid dependant
Sea bass fillets, DH caught and frozen. With mash potato for MIL, she only eats soft foods, and I’ll stir fry broccoli in garlic butter as a main side for me and a side for them.

It feels so cold here today that I felt like something comforting. Today's tea will be sausage, ratatouille and celeriac puree. Think I need to research some more autumnal recipes that can just be bunged in a slow cooker but are a bit 'different' to just the usual things I cook.2
