    I had left over roast beef and Yorkshire pudding again for lunch and it will be the last of my homemade orange soup (squash, yellow pepper, carrot, onion, red lentils and garlic).

    I defrosted a pack of minced beef this morning, half was used for stuffed red peppers (with added diced onion, garlic, mushroom and courgette, and a little bit of rice and grated cheese). The other half has been made into a pan of bolognese sauce which we’ll have with pasta tomorrow night.

    More cherry crumble for pud. I’m drowning in lovely ruby red ripe cherries from our tree (must get the jam making done tomorrow).

    Retro lunch of sandwich spread sarnie and a packet of skips.
    Dinner waa later than expected as lost 2hrs of our life taking stuff to the local tip this afternoon , assumed as it was before rush hour it might be quiet...evidently everyone else thought so too 🤦‍♀️ of course capacity is reduced by over 50% for social distancing (although who wants to rub up close and personal at a tip? 😳) . Ours has been open for a few weeks for limited items but this is the first week it's taking everything. Can't fault the guys working there though, doing a great job under difficult circumstances. 
    So dinner was pasta and tomato pasta sauce, i added an m&s lamb shish kebab chopped up in mine (got a ys pack of 4 reduced from £4 to £1.21 ...yes don't get the 1p either, at the weekend). White choc chip cookie
    ..also from m&s for afters.

    Morning. So the chicken kebab thing from Aldi was yummy. Felt like I was having a takeaway. Everyone felt it was a lovely treat but agreed we shouldn’t have it too often. So I shall pop it into the meal plan for once per month as a treat for us all. I think tonight will be belly pork pieces oven roasted with veggies or spaghetti bolognese, whichever is closest to taking out of the freezer without digging around. Lunch will be a jacket potato with cheese and salad.
    Starting Total in September 2019 = £38287.77
    Current Total = £25534.10
    33% of debt paid off so far

    Debt Free by Christmas September August July June 2023!

    chilli already prepared for dinner so i can crack on with painting the back fence, its mammoth! lunch will be some of the aubergine parmigiana 
  • I’ve got a pack of mince out of freezer. I think I’ll do a cottage pie. I add onion, carrot, celery and 2 tablespoons of red lentils ( thickens it) to the mince. 
    I’ll do green soup for evening meal. I’ve got a broccoli stalk, lettuce, onion, frozen sprouts, peas and mint. Sprouts are surprisingly good in soup, they give a bit of body. I love my Salter soup maker. I just bung stuff in and 25 mins later it’s ready. I tend to do soup by colour. Yesterday was orange soup - squash, yellow pepper and carrot. I always add an onion, 3 cloves of garlic, stock cube, salt and pepper. I add herbs as well sometimes eg basil in red soup - tomatoes, red pepper (jarred if no fresh) carrot. Ham and lentil is one of my favourites. I portioned up a pack of ham and froze it earlier in the week ready for soup making. I bought some leeks earlier in the week so I’ll b doing leek and potato later. Soups are an easy way of fitting in your 5 a day. 
    C J - I’ve got cherry envy. Cherry is the best wine I’ve ever made. I used M n S cartons of cherry juice but I’d love to do it with the real thing.

    Misshrissy - I make soup on a Sunday, using whatever’s left in the fridge, really easy way of using up stuff and free work lunches all week, this weeks was chicken and sweetcorn, as I had the leftovers from a roast chicken and make stock, added frozen sweetcorn, soy etc - done 👍

    Tonight is jerk seasoned chicken breasts with salad and fried new potatoes which were left over from the weekend, and icecream, it’s boiling here, so ‘needed’ icecream 😉

    Note to self - STOP SPENDING MONEY !!

    Ooh now, cherry wine! That's a fantastic idea. We used to make quite a bit of wine (and cider) in the past but haven't done anything for a couple of years. 

    I pretended my laptop camera was malfunctioning during a three hour (very non essential) work Zoom meeting this morning (shhh, don't tell anyone!) and spent the whole time at the kitchen table happily de-pipping cherries with a chopstick while still joining in the conversations :)  I've now made a pressure-cooker-full of sweetened cherry pie filling, and the jam maker has several pounds of cherry jam cooking away nicely.  There are more ripe cherries on the tree, so I am just off to look at recipes for cherry wine - thank you for the suggestion.

    Tonight we are having spaghetti bolognese. I have a couple of bananas which I froze as they were starting to turn a bit too ripe for our liking, and I believe you can smash them up and process them in a blender to make instant banana ice cream so I'm going to give that a whirl for pud :)

    Bit of a mish mash of things for lunch.
    Dinner was Jersey Royals, petit pois and smoked salmon with strawberries and clotted cream for pud.
    Cut and cooked the three large sausages in the fridge to turn into a casserole but they didn't seem to fry very well and then i over grilled them  so they're a bit overdone 🙄 I'm banking on the casseroling to cover that up somewhat. Will do that tomorrow,  got some chicken stock out of the freezer to use instead of just plain water.
