Done a full meal plan for the week and will be going shopping tomorrow morning. On the menu for tomorrow evening is carnitas wraps - for which I will need a pork shoulder, some spices, and some orange juice. We can have again for lunches throughout the week and apparently it freezes really well so great so have on standby for sandwiches and wraps. Planning to have some sweetcorn, feta (leftover from last week) and salad in the wraps with it.
Other meals planned for the week include:
    • Halloumi with roasted veg, cous cous and salad + homemade houmous
    • chickpea and cauliflower curry
    • Sausage and mash with baked beans
    • Basa and prawn (both in the freezer, and leftover mash) fishcakes  with salad and peas.
    • Vegetable soup
    • Chicken and homemade coleslaw sandwiches
    • Halloumi, carrot and houmous wraps
    • Chicken and mango chutney sandwiches

It’s a lamb roast in my slow cooker today. I’ll be serving it with cauliflower and broccoli cheese, and some parsnip mash.
  • Left over mince and potatoes for lunch and a pork chop for tea with some new pots out of garden.

Had Tesco delivery in the week and instead of duck breasts (that were on offer) they delivered duck legs. But I noticed too late. Driver didn't say anything.  Oh well.
So trying to make duck confi in pressure cooker, apparently you don't need any extra fat and takes an hour, it is in now,so fingers crossed! If this works that would be fab,as we love duck confi but not love the price of it when doing it in the oven.. having to buy extra fat etc. It is just not feasable for 2.
Will be served with red cabbage I bulked cooked & froze in past and chive crushed potatoes.

Fish cakes, salad leaves and corn on the cob.

Fishcakes were made from Sainsbury’s cheap and cheerful frozen fish fillets, tin of tuna, mashed potatoes with a cube of Stilton in the centre. Salad from garden. Sweet corn from Tuffins!

Pudding will be meringues with raspberries and alpine strawberries (allotment) plus pineapple.
