Roasted veg, courgette, aubergine, red onion, baby potatoes, mushrooms, tomatoes, I also added in some semi dried tomatoes and artichokes that were in the fridge since Christmas. I did two trays. Husbands had chicken thighs and chorizo. Daughter and I had vegetarian sausages with ours.
I will definitely do that again so easy and tasty.0 -

Back to work here too. I was experimenting with baking lately, made a bunch of mini rolls, coconut cookies and pizzas. Actually I got an Uuni oven like this mostly for culinary experiments, to make bread and various cookies. And because it was cheap. Though I think I should eat fewer flour products and try something with more veggies in it.0
