Lunch out at a well known Italian chain, but who do lots of GF options. Annoyingly couldn't use my 40% code as it was a bank holiday which wasn't obvious (said everyday except Saturday) but hey ho, was very nice and despite ending up eating out on Sat, we don't eat out often)

Sick of bread, too many picnics, roasted a chicken last night and served with roast baby potatoes, mashed turnip and broccoli and cauliflower cheese…lashings of gravy, made far too much so plenty for tonight and probably tomorrow, the plan was to use the leftover chicken for fajitas but looks like about three days of roasts haha

I've made a spinach and ricotta lasagne for tonight, and there will be some of the Malteser cheesecake for pud.

Stir fry here, my dad popped in as I was making it. He asked what some of the veg were as I prepped them (pak choi and tender stem broccoli) What were the oils, why were the prawns not pink, what were the noodles. I felt like I was running a cookery class.
I offered him a portion but he declined.

We were in Spain a few weeks ago and my favourite meal was tuna in olive oil and lemon. Spanish potatoes (these were sliced and layered with onions and green peppers) with veg.

So I tried to recreate it for dinner, maybe because I wasnt overlooking the sea...but it wasnt the same. (Or maybe it was my cooking)

I’m making some pan fried harissa-spiced salmon tonight, served with steamed tender stem broccoli and a bit of rice.
