Have got a huge rib of beef from the freezer. Got this at a good price from my butcher a while ago. So going to be roasting that and will have with all the usual accompaniments apart from yorkies which I don't eat! Really looking forward to it.

Roast potatoes, parsnips and carrots, peas and broccoli. OH is having YS beef, I'm having a Quorn chicken and bacon lattice. Lots of gravy!0

The beef was absolutely gorgeous! I made DH some yorkies as he fancied them after I'd mentioned them! We had HM lemon meringue pie - lemon curd made by DD1s OH who is a chef!
There is loads of beef left so will be having some cold, some will be frozen in gravy for mini roasts midweek (or even weekend if we are away in our motorhome!). Will probably also mince some and make shepherds pie. Think I'll probably get another 4 or 5 meals at least from it for the 2 of us.

OH having cheese on toast here too.
I had a prawn linguine thing that I'd bought YS and froze, it didn't say you couldn't...though it didn't say you could..so if you don't hear from me again you know why :eek: cooked some extra courgette to go with it, was actually quite nice for a ready meal.Feb 2015 NSD Challenge 8/12JAN NSD 11/16

Prawns on pumpernickel toast from ‘The Little Swedish Kitchen” by Rachel Khoo. Page 226. Sauce for the prawns was made with creme fraiche, homemade mayonnaise, dill and dijon mustard. Skipped the caviar! and made a side salad.

Hi. Meatless Monday for us, so planning on using the two aubergines in the fridge to make a Burnt aubergine chilli off the BBC Good Food site. I think the name sounds a bit off putting! Hoping not to burn our tea
, but the recipe reads quite nice. Will serve with brown & white rice mix and some homemade guacamole.

Made some low fat faggots yesterday so will be having some of those tonight with mash & veg. The onion gravy tasted amazing when I checked it yesterday!
Looking forward to this as not had it for a long time.

We had a small roast chicken for dinner last night, so I will be using up the leftovers tonight - probably in a chicken and chestnut mushroom puff pastry pie.0

We had a salad for lunch chicken strips with mine and chilli beef strips for He Who Knows.
Supper tonight will be a bowl of tomato and lentil soup followed by a continental lentil and hard boiled egg salad with a spicy dressing , our usual cup of black coffee to finish.0
