    Fourth Anniversary
    A lazy meal this evening, jacket potatoes with anything you fancy....cheese, baked beans, chilli,coleslaw. Want the meal over early as am looking forward to all the Red Nose Day showings on TV later

    Have been sat in tedious finance meetings all days..... have for some reason been thinking of risotto which is good as I have some white wine and mushrooms that need using up. Would usually use arborio but was given some Vialone Nano to try by an Italian friend as it’s his favourite.

    Edit: Yes, enjoyed that rather a lot! Not sure if the Vialone Nano rice made much of a difference but hey ho!

    Oven fish, oven chips, tinned baked beans, white bread and butter.

    Used up some freezer bits with half a jar of sweet n sour sauce....last few bits of a bag of quorn pieces, last few bits of a bag of frozen Thai style veg, small handful of some chopped frozen peppers (I'd lobbed them in the freezer when they were in risk of going wrinkly) and some tinned pineapple I'd portioned up and yep...put in the freezer.
    Also two mini spring rolls..also from the freezer :rotfl:

    Made some egg fried rice using half a bag of brown / wild rice and quinoa (micro bag from Aldi) and adding an egg (unsurprisingly)

    Was all in all rather yummy and felt good using up odds n sods.

    Spanish style chicken here, basically, tomatoes, peppers, garlic, olives, smoked paprika, would like to have chucked chorizo in, but don’t have any and am not heading out in this weather... ;)

    HM spaghetti bolognaise here, from the freezer stash so easy. Have also done a menu plan for some of the week.
    Tomorrow - Sweet & sour pork
    Monday - Prawn & spinach pasta
    Wednesday - Lamb rogan josh
    Spend less now, work less later.

    I’m going to make some pork, chilli and lime meatballs in some kind of sauce (prob tomato and red pepper) to have with some rice and stir fried veg. Fusion food!

    Have some lamb mince and pork mince left over so making a batch of spag bol shortly , which will leave enough to make a lasagne tomorrow too.
    Old french stick left from yesterday so making some garlic bread out of it for tonight too.
  • Just DH and me for dinner tonight as DS has gone to a football match. We're having sirloin steak, garlic butter, a few oven wedges, balsamic roasted tomatoes, peas and onion rings and a nice glass or two of Malbec. (DS thinks we're having egg and chips :rotfl: )
