Quorn lasagne for me, sweet potato fries and quorn sausages for OH.

I also cooked a sausage casserole for the freezer and in the week, there's six sausages but I reckon I can get three potions with two sausages each, plus another portion of just the sauce / other ingredients which I can then add some chicken or LO Xmas turkey I think might still be in the feeezer to.

  • A sort of menu plan for week to use up freezer etc so today 2nd half of Iceland salmon risotto, then already cooked venison ragu (half in freezer) with maybe chips & peas, cook some samosas and eat biryani portion which neighbour brought round today - she made for her son and had plenty left. Next going out for lunch with friends, hm mince meal (not sure yet what it is, its a lump) Friday, cook sausages from freezer but have pizza from freezer for meal, Saturday a chicken something wih tenderstem and asparagus maybe couscous the back to Sunday and will get a YS ready meal out. Almost all is already cooked and frozen and the to be cooked will go for lunches. Well that could sort out quite a bit, will have to not go shopping,

Today, I'm making a pork fillet with stuffing and wrapped in bacon, red cabbage, brussels, carrot and swede mash, peas and roast potatoes.
I will also make a big portion of macaroni cheese, with leeks and broccoli and freeze that.
Daughter will moan at Sunday dinner, so can have left over biryani or some macaroni cheese.

Roast beef and all the trimmings for us today - it has been pelting down with hail and I’m in need of comfort food :)

Leftovers will be minced up to make a cottage pie for tomorrow and Tuesday.
  • Roast chicken with pork and sage stuffing, new potatoes, broccoli and carrots, yorkshire puddings and chicken gravy for us tonight I think.

DH has roast pork with a herb crust in the oven with roasties, broccoli, carrots and peas. Pudding is a cheeky chocolate trifle from Mr T.

Had a Maccy D's earlier this afternoon, but in my defence I had run 13.1 miles beforehand so felt I'd kind of earned it. :o Not entirely sure what / if I may have later...it may be casserole or it may be a manly pot noodle...I need to replenish my salt levels :rotfl:

KERRIE to be fair, if I ran 13 + miles I’d need an iron lung, so I think you more than deserved the Burger ;)
