We had a fab night last night, much food eaten, much wine drunk

Over the weekend I caved and bought a microwave (have done without one since March) - it's one with a grill and oven too, so will be handy when I move in with the OH and we have to buy a normal oven. This way a proper oven can be low down on the list of priorities as the little one will do for a few months.
Consequently, had a jacket and cheese and beans for dinner. Really missed them, cause turning the oven on for an hour plus for one jacket was just not going to happen.0 -

I tend to do a few jackets in the oven at once, then freeze for future use. Once defrosted they don't take long to reheat.
Tonight was dusted basa with Caesar salad and wedges which have been in the freezer for ages....sadly they will now be going in the food compost cadddy (our local council collects) as they were grim. Neither me nor OH liked them ...thank goodness they were YS and no longer lingering in the freezer!Feb 2015 NSD Challenge 8/12JAN NSD 11/16

We have been away for the weekend it was so lovely not to have to think about what to make for dinner. It was a lovely hotel, nice food and I came home recharged and ready to go. Whilst husband drove home late morning today, I did a meal plan and a shopping list and we popped to Lidl enroute home.
We then had to do some visiting, so I put a chicken, and roast potatoes in the oven and left it on low. When we came home I finished off a cauliflower cheese and served it all with beans from the garden. Not as fancy as the food I had yesterday but nearly as tasty.0 -
It was still too hot to want to cook yesterday, especially after working in the garden, ended up with hard boiled egg, corned beef, beetroot, mixed salad and HM coleslaw, was rather irritated cos my mayonnaise split while I was trying to make it and the stick blender seemed to be getting a bit warm:eek:, ended up using 2 more egg yolks, but did get about half quantity, the other half of the split batch is in the fridge, need to decide whether to dispose of it and how? or to try and use it later:)The best thing about the future is that it comes one day at a time. The last of the soup for lunch today and a cold ham salad for supper tonight. Berries and fat free yoghurt for pudding and the usual cup of black coffee.
I'm so fed up with this heat, I like cooking and it's just too hot to either want hot meals or have the energy and stamina to cook in a broiling hot kitchen!0 -
