I received asparagus and purple sprouting broccoli in my veg box on Friday so this evening I used up the rest of a packet of filo and a grana padano rind to make a variation on this Nigel Slater recipe and I also made Delia Smith's Foaming Hollandaise to eat with them.

Meanwhile in Casa Brie we are both recovering from colds and so dinners have been minimal. Can't remember ever being reduced to have a piece of toast for dinner. I did try a grilled cheese sandwich on Saturday but couldn't manage the whole thing. So last night was a single piece of toast with some peanut butter. Hardly the gourmet food we were having a week back. So much for the leg of lamb and trimmings that I bought for Sunday lunch.

I had bubble and squeak with leftover beef.

I had a fossick through the fridge and made a salad with lettuce, wild garlic, spring onion, carrot, radish, petits pois and sweetcorn and a couple of hard boiled eggs and then made Nigella's Golden Garlic Mayonnaise to dress it with. Delicious and I'm quite proud of myself for not succumbing to the temptation to dash out to the shops for cucumber etc. I'm going to put some dried chickpeas to soak overnight to make some hummus tomorrow as well.

Was wondering about dinner as I still have little appetite (don't worry I have plenty of fat stores to sustain me for some weeks.) I mentioned to the OH about having a jacket potato and he launched into one of his speeches about me not eating very well and that I should have something just so I could drowned it in butter. OK - so I like butter. But I wasn't even sure I wanted a potato and wondered also about responding with a comment about how much honey he puts on his morning yoghurt. Or even how much morning yoghurt he has. Whatever amounts you are thinking of for both I'd say double it. And then double it again. And add extra honey.
So when at Texco I thought hard (as hard as my foggy brain will think right now) about what I really wanted and that was chicken. So I bought some thighs. I'll likely cooked them all up and have as much as I fancy tonight. Whatever is left can be used as a sandwich or a potato topping, which will hide the butter.

@Brie - J. Paul Getty used to say the ideal meal was a baked potato with butter. During War War II they even did a study about it and discovered it was the ideal meal. I like mine with a little cheese or a little chives (or green onion tops) on top. Best meal to have.

sour cream and chives are lovely. Or I've occasionally add a bit Ranch dressing - if I have a decent one. I can get the Paul Newman brand which is good but they don't sell Hidden Valley which I would love! There were some great local versions in the grocery stores in Niagara but being fresh were too difficult for me to smuggle back to the UK.
when my mom came to visit once a couple of decades back I took her to a lunch spot and she was surprised at the different toppings available for a potato. Tuna with mayo and corn ended up being her favourite. Personally one of the best I found was when I could go to the staff restaurant and they had creamed spinach available. They never sold it specifically as a potato topping but they always had (massive!) potatoes and were happy to top them with anything they had as vegetable side dish.
